I know this video is almost 2yrs old but it's one of my favorites. If chef Santan is still around, I would love to see another collaboration. Sometimes it's good to add more sauce and flavor. These sauces are my good to for that little extra.

If anyone is interested, I thought i'd share a good ingredient mix for the Goan curry. I made the sauce as per the video, but mixed it with 2 tins of chopped tomatoes in a blender - you could add 1 tin and 1 tin of coconut milk, but I am trying to cut down on the amount of coconut milk I consume. For the vegetables, I oven roasted sweet potato, red pepper, mushrooms and broccoli for 35 minutes until soft and tender. Fry 1 onion and some garlic in a pan, add the oven roasted veg, then add the sauce. Bring the whole thing to a gentle simmer until hot throughout. This was delicious and goes great with rice and a toasted wholemeal pitta bread. Hope someone finds this useful :)

Hey guys, tried the korma sauce and loved it. Thanks for sharing. It smells soo good while it's cooking! I'm actually making it for the second time today and wanted to let you guys know that the written recipe on the blog is missing the step where you need to add the tomatoes. I ended up adding them last. I'm sure it'll still be delicious, it smells amazing. Just wanted to let you know. Will be trying the turmeric milk next!

I like these Indian dishes with Santan. Even though im not vege or vegan I do love a good coconut milk korma over a regular dairy korma, it adds such a delicious sweet flavour.

These look amazing! How would you make these sauces into chutneys? Or is there that much of a difference between the two? I'm thinking of he difference between a sauce to serve with vegetables, versus maybe a thicker chutney to serve with flatbreads, for instance? Less blending?

Also I doubled all the ingredients as I was worried that it wouldn't make enough for us all and just to let you know I grossly underestimated it. I probably made enough for about 12 people, and there's only 4 of us hahaha

He is so brilliant. I think he needs to come back on, to do more sauces, and also then cook a dish with one of the sauces. If love to see that. Perhaps separate videos, or a real long one. Don't know.
I'd love to know how to make a Jalfrezi, perhaps madras, a Naga chilli would be awesome as you can costomise the heat yourself based on the amount of Naga chili's you add, I would assume. I think they are made using ghee in Indian restaurants/takeaways, but years ago, before I went vegan I had one and it was delicious, the flavours are so nice, and also a dopiaza one.
And as for you were asking what veg to put in the curry, I can tell you my favourite, cauliflower, brocoli, big bits of onion, white potatoes, garden peas, yellow peppers, possibly orange peppers (I don't like the red ones cooked, and I just don't like the green ones, but thatnis personal choice) I also think some curries if not most parsnip would go great in and butternut squash, corgette because it will just soak up all the flavour and then melt in your mouth, and as for chana/chickpeas in the curry, that is something that is always in curry, and to be honest, the canned ones I get here are always on the hard side and a bit powdery, for some reason, I've had chickpeas elsewhere in other things, and they taste fine, I have no idea whatnim doing wrong. And I'm disabled and housebound, I have support and carers for very little time to help with meals etc etc so no time to cook any beans or pulses from scratch. Would your brilliant friend there be able to recommend some other beans that would be good in curry?

how long does the coriander sauce last in the fridge? is it a cutney or a sauce to cook the veg in?
Tell me some good dishes with the first and last sauce, especially the last one (would die from the 2nd one, too spicy). I eat mainly lentils, split pea, beans, rice, potato (in this order).

For the vindaloo sauce when they say chili powder, does that mean cayenne? I think certain things go by a different name in Ireland. Chili powder isn't spicy in the US.
cayenne is actually more spicy than chilli powder. They are very similar and the main difference is in the heat. Cayenne can certainly be substituted for chilli powder (I have never found chilli powder in regular supermarkets in the U.S. I get mine from the Indian grocery store). Hope this help!
When he says chili powder, he is not talking about Mexican chili powder. Red chili powder is way more spicy - try an Indian market, they will have a breathtaking range of spices.
