Cooked this last night. Absolutely beautiful. Had enough left over for a second night. Pimped it up in the second night by chopping some Linda McCartney sausages through it. Amazing. Our kids loved it as well. Cheers.

Tried this one out tonight. It's a nice and easy to cook midweek meal. Next time I'll take less veg stock and more of the bread crumb mixture. Maybe I make some bread crumbs in a pan as they got soggy in the oven.

Loved the flavor of this - the veg stock + bechamel is definitely the secret. Makes the veggies taste really stand-out good. Would make great leftover lunches for the week and has way more vegetables than I would normally be able to fit in a work lunch meal.

THANK YOU for making my vegan life easy! Update: I made this last night. Holy bejesus it was incredible! My favorite thing I've made. I made a few tweaks, I added mushrooms, swapped the leek for bok choy as that's what I had, and added buttercup - sliced into cubes which I boiled along with the kumara to soften them slightly before cooking (so I could have the skins on the buttercup too). I am slightly obsessed with buttercup atm so I'm putting it in everything haha. Amazing recipe guys! THANKS

Grinding walnut halves (without shells, of course) with the breadcrumbs ups the nutrition value. They brown very quickly, so under the grill rather than the oven perhaps.
Definitely a winter comfort-food dish but I couldn't resist making this right away during the hot weather. :D Freakin' DELISH. I added mushrooms, cauliflower and goats cheese. So easy and amazing.

Tried it this evening, the volume of veg was twice what my dishes could handle so I made soup with the extra veg and used all the bechamel sauce and 300ml of veg stock (the rest of the veg stock went towards the soup!). Dish was delicious! Next time I’d either chop the sweet potato smaller or cook it for longer as some cubes were still crunchy! I’d also half the volume of veg and use more bechamel sauce and no stock to make it more creamy.

Do you think a can of rinsed flageolet beans might be nice added to this dish if you want to increase protein content? I like the idea of using oat milk for bechamel. I have found that it thickens up quite a bit when heated (e.g. for hot chocolate).
