A helpful tip rather than some rude losers in the comments, Try juicing the core of the pineapple or actually grating it before mixing it in with the sauce. It helps create much more of a glaze that tastes great and no waste. Cook it down in the wok with the vegetables and the texture becomes much more manageable.

I must say, you are, by far the best I’ve ever seen. I always viewed cook books as “not worth it” maybe because I can already cook and stuff… but if you dropped a book, I’d buy it without even thinking, do you ever plan on dropping one?

that looks alright, but i personally would velvet my smaller pcs of chicken, cornstarch coat it then fry it bell peppers, big red onion, & pineapple chopped to triangles as similarly sized like my chickens then hot oil, tomato sauce, lime juice or vinegar, and sugar. salt pepper. add ur fried chicken & triangles and potato starch slury to the gravy then boom

You could probably get a bigger bowl so you can mix the rice with the chicken and vegetables and not get left with disgusting flavorless rice.

A small amount of oil is enough because of the smoke point
When it comes to deep frying, yes it needs that much oil. If you have excess oil pour it in a bottle and use it for later so you don’t waste it
