I would of done everything he did but stopped after the meat was braised; got out a bowl of white rice and put 2 of those fabulous shortribs on top, then a couple of large spoonfuls of that fabulous sauce ( not strained) right over it with some chopped fresh parsley. No frying, no bechemel etc.
Well it was a croquette so he had to turn it into one. Béchamel wouldn't have been my choice either but it's a side dish anyway so whatever. That shot of the meat falling off the bone was mesmerising though. 🤤

I think the salt draws out water from the meat, the water absorbs the salt, the now salty water is then reabsorbed into the meat. It should give it a more "meaty" taste
It's called a dry brine. Initially, this technique will pull moisture out, which will carry the salt back into the meat, as it gets reabsorbed overnight. Like our friend above suggested. Leaving your meat in the fridge like this, overnight, will also help to dry out the surface, which helps develop your sear. Very common for steaks and roasts.

That’s beef stock. Good quality beef stock gelatinizes when it cools, due to the gelatin in beef bones.
