I really don't know about this fermentation process for cassava because in ghana we simply peel, boil and pound our cassava. Maybe our variety of cassava has less cyanide which is easily removed by boiling 🤔 also our fufu is always a mixture of cassava and yam or plantain or cocoyam so it may change the dynamics or something. I see Nigerians screaming at Ghanaian food bloggers whenever they see them prepare fufu without fermenting the cassava. I want to assure you guys that it's perfectly safe. My grandma ate fufu nearly everyday of her life and she died from old age at 100. My mum is 73. My grandmother's mother(my great grandmother) died in her 90s and they all ate fufu everyday so I'm convinced our variety of cassava is different. If it was as poisonous as is portrayed then all our farm animals should be dead as well because I read that the peels contain the most cyanide but we feed our farm animals with them and they grow very well.
So dear Nigerians if you see Ghanaians cooking their cassava without fermentation stay calm, if it were that poisonous the entire country of ghana shouldn't exist
You can't eat some species without fermentation if not it can kill due to high content of hydrocyanic acid.

Hi Hellen. I think this is different from place to place with type of soil too. The area I come from, we have have had families died because of cassava. In other areas in the same country they don't have problems. I was told cassava can be very poisonous when grown in volcanic soil.
Yeah im a Ghanaian too and that's how we also make our fufu as she's saying and is healthy culture is dynamic we eat it every day here.
More to that, we don't eat the cassava alone.Either with plantain or cocyam. Maybe thats why we don't need the fermentation process

In Tanzania we have ugali. It's very simple to cook. Simply you need corn flour and boiled water and stirring it until it becomes sticky (hard)

As West African, futu is one of my favourite food. I love fufu so much, the only two foods that my guts recognise the most Rice and fufu.
My gut loves cassava or Yuca in my country Puerto 🇵🇷 Rico and I love it.

@@AdorableKitchen what is the cassava variety you used because cyanide poisoning can occur without proper fermentation. I think the FAMIWA VARIETY is OK or the Ghana varieties with very low cyanide content for this recipe.

Lovely very nice fufu
There are two kinds of cassava. The bitter cassava juice is harmful due to cyanide and has to be removed before making cassava bread. We have also sweet cassava that is not harmful. It can be eaten boiled as yam or cocoyam. This is the Caribbean culture.

One of the dishes we mix the cassava dough the starchy part with ma/morri ie fermented corn and prepare banku with that, it is so delicious when made with banku.

I also do it this way without soaking it , cut your cassava and plantain into pieces, after blend it at least let the plantain at least many, blend all together after, stir it in sauce pan or heat in microwave it really taste nice
