After I make my sofrito, I pour it into ice trays and freeze it. Once frozen, put the sofrito cubes into plastic freezer bags and keep in freezer. When cooking, each cube is about 1 Heaping tablespoon. If you are making Arroz Con Gandules for example, you can throw 3-4 frozen cubes in with the pork while sautéing it. The frozen cubes only take a few moments to defrost while cooking. This is a great way to preserve your sofrito. These cubes will last for months in the freezer.

omgosh, I got nervous and literally jumped back in my seat when I saw you put the wooden spoon in to push down the ingredients. you brought me back to a time when I RUINED my whole batch of sofrito because I went too low with the spoon and it broke inside the container! For a quick peal on the garlic separate the head into individual cloves get a mason jar ( quart size) put all the cloves in lid on and shake like you making a drink. The peels will come right off as the garlic bangs against the jar. Beats peeling by hand any day.

I am a fan of good cooks as I am at home now no longer a cook out in the field, I went into medical. I believe though food is medicine and I like history with foods to know where they came from or how they are used for medicine for the body and of course taste! tip I want to share- home made funnel cut the plastic milk carton in half or a gal jug cut it near the handle and use the end part with as your funnel to pour into jars.

What if you can't find adjicito pepper. I have been to my local market, and the spanish market and there are none to be seen. Can I use a pueblo pepper or italian peppers for substitute?
I use Cabanele peppers instead. I don't put onions as I like to cook my onions first. Be careful with the ajitos as some are very spicy. Keep cooking sweety xo

+GQ3MindSpeaks How are you. I keep my sofrito up to 3 months and it doesnt go bad. not that it last that long cause i use it up pretty quickly. But you shouldnt have a problem since the oil preserves it

I live in ft Lauderdale, and I can't get ajicitos anywhere. I've tried hunting them down for months. In N.Y., I used to get them. Any substitution?
Have you tried shopping a bravo supermarket they usually have most things Spanish. I sworn I've seen them there.
Go to sedanos in Hollywood 2319 north 60th ave, they have everything you need
Sweet mini bell peppers usually sold in a mixed pepper bag assortment of colors in any supermarket would be a good substitute. Colors range from yellow, orange, red, green and light green. Very colorful and flavorful. Regards...Jorge.
