SURANACHE KAAP
Ingredients
500 grams yam (suran)
Marination
3-4 green chillies
4-5 garlic cloves
1 inch ginger, roughly chopped
1 tsp tamarind paste
Salt to taste
1 tsp red chilli powder
¼ tsp turmeric powder
2 tbsps chopped fresh coriander leaves
Chutney
2-3 green chillies
15-20 fresh mint leaves
½ cup fresh coriander leaves
2 tsps lemon juice
Salt to taste
1 tbsp roasted peanuts
Method
1. Peel yam and thoroughly wash, cut into medium thick slices.
2. To make the marination, put 3-4 green chillies in a blender jar, add 4-5 garlic cloves, 1 inch roughly chopped ginger, ¼ cup water and blend to a fine paste. Transfer this into a large bowl.
3. Add tamarind paste, salt, red chilli powder, turmeric powder, and coriander leaves and mix well. Add yam slices and coat with the marination from all sides. Set aside for 5-10 minutes.
4. Meanwhile, to make the chutney, put 2-3 green chillies in ablender jar, add 15-20 mint leaves, ½ cup coriander leaves, 2 tsps lemon juice, salt, 1 tbsp roasted peanuts and ¼ cup water and blend to a fine paste. Set aside until use.
5. Spread ½ cup semolina, 2tbsps rice flour, salt, ½ tsp red chilli powder, and mix well. Coat each yam slice with this mixture.
6. Heat sufficient oil in a non-stick tawa, place the coated yam slices, shallow fry on medium heat till golden brown and crisp on both sides. Drain on absorbent paper.
7. Arrange the fried yam slices on a serving plate and serve hot with the green chutney

Only change I did is I blanched them first with kokum.
In KOKAN..first suran pieces blanch with sault and -2-3 pieces of kokam...so u can avoid itching (some suran have this itching quality)

We in Telangana use turmeric and boil in salt water and later shallow fry.

Suran should be blanched in tamarind, kokum or lemon water to let go of the itchy ness which is present in suran or the yam.

We do this at home. But we boil it and then the same process as this video. Also we use kokam instead of tamarind.

I think everyone has suggested to boil the suran
Suran potato jaise jaldi nahi pakta unko pkane me time lagta hai,aur Etna mota katke to shallow fry karoge to pakna possible hi nahi.hum ese bhi patla katate hai fir bhi pahele pani me pakate hai . pakate time pani me kokam dalte hai (to avoid eitching)

The suran pieces should be blanched before preparing for the next step. It remains raw and hard if it's cooked without blanching.
Yes u r correct cz it is a hard stuff to become soft after a shallow fry so better to blanch before atleast we Bengalis follow it before frying some hard stuff
