Rinsing potatoes isn't about stopping them from sticking in the frying pan it's about reducing the amount of starch which converts into sugar that spikes blood glucose levels for us type two diabetics. Storing overnight in the fridge after boiling, baking, and microwaving also helps to convert much of the starch into resistant starch that the body reacts to like it is fiber, which in turn offsets the sugar that the cooling process creates. Although, spending the night in the fridge may change the way the potato cooks, its texture, and its taste slightly, being able to eat potatoes without my blood sugar spiking is priceless!
What a great breakfast! Next time cook it on your Blackstone Griddle so easy and fast. When you got close to being finished cook your eggs and warm up your tortillas all at the same time.
Arnie when you come up with your cookbook please put it out for sale I would like to buy it I made some of your food and is absolutely delicious I made the potatoes stew beef and when I had friends over and it's absolutely good I also made one with potato and one with turnips because my husband's on a diet but also taste good with turnips you follow the same directions you just change out the potatoes for turnips chunks liked the potatoes that also is delicious 😋 thank you Arnie

Same concept, cook/smoke a delicious cut of meat (brisket/ribs/chicken/etc..) then use the leftovers the next morning in a hash. That rib meat is so good in a hash with eggs for breakfast. This makes me long for brisket taco/ burrito. Brisket, beans, potatoes in a flour tortilla…right off the smoker. Sometimes I’ve heard people call them brisquetas.
Trick for onions is to wear swimming goggles. The onions release gas into the air that mixes with the water in your eyes to make an acid. Swim goggles is the only practical way I know to avoid it. People say you can freeze or chill them to reduce it.. Doesn't work for me.
Fry potatoes eggs and Teresa sausage is my favorite breakfast at Mexican restaurant. It is real Mexican restaurant they do not speak much English it is ok because we all have bad English. 😂 I learn little Spanish fun for me .
