I used to fail at smoking a brisket a lot. When I did I would take it to my mom's house, and she would convert it into a brisket beef po boys. It was soooooo good.

I have used leftover brisket to make a pan of enchiladas. It was delicious and the smoky flavor of the brisket only adds to the flavors of the cheese and sauce.

I do lots of these things too with leftover tri-tip. The leftovers are the best part. I love when my husband smokes a brisket but we can only do that when we have a party. Just too much meat for two of us.
I would think a breakfast brisket hash with potatoes, onions and bell peppers would be fabulous. Fry a couple of sunny side up eggs and add some Pico de Gallo or salsa on the side and this would be a home run.
After my brisket technique started working…. I asked myself “was it worth it?” The next day I had leftovers…. No hesitation “yep totally worth it!!” I get so tired from the cook all day sometimes it’s hard to sit back and enjoy it until the next day.
Arnie, have you ever thought of doing a hack on Chinese fried rice? I use leftover brisket and Mexican rice then I add a bit of this and that. It comes out different each time.. I have been fooling around this idea for a couple of years. My family is eats it all up, but I think something is missing. What do you think??
Terry makes a really good white rice in the rice cooker, we use it lots of different ways, even in my morning eggs, protein plus cards can't go wrong there, boom!
@ArnieTex have you ever tried white rice, scrambled eggs and teriyaki glazed spam for breakfast? the spam is cooked just like you would for spam musubi, seared and glazed. its a mind blowing combination for breakfast or any meal really.
You’ve got to try this method. Loosely wrap a leftover brisket in foil then let it sit in your freezer for 14 months. Cube it and throw it in a crockpot with anything in the fridge that’s nearly expired and boom. Best chili you’ll ever have. 😉

I’m with you on this one. I have made fried rice when leftover tri-tip and pork roast. I’m half Filipino so there’s usually day old white rice around.
