Using the pressure cooker is not being lazy. It's being time efficient. Once it's finished in the pressure cooker, pour the liquid in a pot and let it cook down into a thick gravy to one's own liking so the flavor is not lost.

Love your cooking and methods, I’ve been cooking Trinidadian and Jamaican for past 35 years and learned a few tricks along the way from my husband and his family. I’m Eastern European and grew up using pressure cooker and the reason is, it locks the flavour in. I’ve been using the One Pot for last 10 years and I have time when I need to cook cause I have to eat. I can cook certain dishes on my stove in good pots and some in machines like one pot that is useful to some and not so much to others. I know what I need to make my cooking simplified and time faster like prepping food so that’s why I use the mandolins for slicing, food processor for certain chopping and on. My Grandma used to wash clothes on a board and boil her clothes today we have washers just as useful machines to simplify our lives and as well as the people who are with arthritis or cannot chop as they used to or stand for long. My late Mom was one of them and had to resort to Pressure cookers, choppers etc. Enjoying your cooking techniques! You’re very talented! 👏🏼🙏
First time I ever made curry goat was with your recipe "The Ultimate Curry Goat Recipe". It really is and I still make it the same exact way for my Jamaican Husband! His sister always says she makes the best curry goat. But he says she is wrong. That mine is the best, so PROPS for that, haha! We all love it, and its one of our special occasion dishes! My daughter always wants it for her birthday meal now! I also make your green seasoning. I keep some fresh in the fridge, and make extra and keep it in the freezer in portions for recipes like this and I use it when making curry shrimp or chicken as well. We love it. I also have your original cookbook! Is the new book any different? Have a wonderful holiday! Thanks Chris! Gonna have to give this one a try too now! Guess I gotta make that pepper sauce too, since I have a nice amount of peppers left from my garden.

Great recipe. But mine turned out a little bitter and I didn't let the brownsugar get black. I put the goat in when the brown sugar was frothy.
Putting salt it last takes longer for it to penetrate the food to release its flavour. That what i saw when i was on youtube.
