You'll Need...
4-5 lbs goat (bone in)
1 1/2 tablespoon Caribbean Green Seasoning
1 teaspoon salt (adjust)
1/2 teaspoon black pepper
1 medium onion
1 medium tomato
1 scotch bonnet pepper
3-4 cups water
1/2 cup coconut milk powder
5-8 cloves garlic
1 tablespoon grated ginger
1 1/2 tablespoon golden brown sugar
1-2 tablespoon parsley
2 limes (juice) for washing the goat.

I've been a fan for a while and you definitely know how to cook. But when I heard "the acidity of the tomato will help to balance the flavor", man you get full marks! 100%!!!! Definitely making this! I am able to get "less bone" goat at my Caribbean grocery store. Center bone and mostly meat. Best of both worlds as I hate finding little bone splinters. Just my preference 😋

There's this reggae and dub festival I went to for a decade, and there was a food stand from Senegal that featured a goat stew. Before that, I never knew how delicious goat was! Had it every year! Now I don't go to the festival anymore because it got too big and lost its atmosphere, so I have to make it myself. Can't wait for my butcher to have goat again (it's a seasonal thing here).

Funny, this reminds me a lot of the cooking styles where I grew up in the Seychelles Islands. 10,000 miles away, but very similar influences to the Caribbean (African, Indian, Asian, British/French). Ginger, garlic, chili and thyme go into everything I cook!

I remember as a child in Trinidad my mother would sometimes make curry stew. It was delicious especially when marinated the meat 2 days and left it in the fridge.

This looks fantastic. Though I noted near the beginning that you said you always use bone in Goat. Have you ever seen boneless goat in TO? I know I haven't and I have gone looking. Now could be I missed the location they sell boneless goat in which case I would love a heads up on where I can get it 'cause I love me some goat and I love me some Roti but I don't like bones in my Roti.
Yesss! I'm always up for curry goat! Got my own recipe which uses cj wildhearts devilspit sauce, but he only makes it in small batches so it's not always possible 😃

For those who never had goat before and afraid to cook it because you might not like the flavor, you'll get pass it after a couple times when you try the ethnic recipes. They really know how to flavor the recipe. To get the goat flavor to be subtle, soak it in butter milk for a couple hours or over night and it will also tenderized the meat itself.
Where do you get the goat in Canada? I moved from England to Manitoba, and i haven't been able to find it here.

I add a little white rum to my homemade green seasoning to preserve it.

When I do the brown sugar and I add the meat, in my pot it always turns to hard candy. Then, I add water. What am I doing wrong?
strange.. before you add the meat, is it amber in color or black?
@@caribbeanpot it's amber... I don't like the black taste. It's usually my pressure pot, but I have tried with other pots and it's always the same sticky rocky candy. The old time pot good for frying small squares handles (not the cast iron) too.

curry stew... and not fish EDIT! I think I understand the question now. Basically it's a combination of both a curry and stew. Stew in this instance means using the brown-sugar technique we do for stewing meats in the Caribbean. The curry element is the spices in the seasoning/marinating process. Hope this helps.
Chris stew is to cook. You can stew any thing. So when you say curry stew it is confusing. I am a Trinidadian. We do not say curry stew. Never. Then you use browning to first brown the goat and said that this is the stew part of the curry. You know this not authentic curry. Do your own thin g. People seem to love it.

Why you using coconut powder not fresh coconut milk....what happened to using fresh coconut milk being in the islands ? The whole carribean islands are covered with coconut trees. You must be in Europe or the US then.
