Greek Spaghetti & meat Sauce: Macaronia me Kima

    Ingredients
    For the Meat Sauce:
    1 red onion, finely chopped
    1/4 cup olive oil
    Salt, to taste
    4-5 garlic cloves, grated
    2 pounds ground beef
    freshly cracked black pepper to taste
    1 teaspoon sweet paprika
    Crushed red pepper flakes, optional
    1/4-1/2 teaspoon ground cinnamon
    15 ounces canned diced or crushed tomatoes
    1 cup water
    1 teaspoon dried crushed oregano
    1/4 cup fresh chopped parsley
    The Spaghetti:
    1 pound spaghetti
    2 teaspoons salt
    enough water to boil
    olive oil
    1 teaspoon dried oregano, optional
    grated kefalotiri, graviera, or Parmesan cheese
    Instructions
    Make the Meat Sauce:
    In a pot, add the onion, oil, and a pinch of salt. Cook over medium heat until soft and golden. About 7-8 minutes.
    Add the garlic and warm through until fragrant.
    Add the ground beef, salt, and black pepper and cook until no longer pink. Break up the ground beef while cooking.
    Add the tomatoes, crushed red pepper flakes, cinnamon, paprika, and a little water and cook on medium-high heat until the sauce thickens. About 20 minutes.
    Taste and adjust the seasoning if needed. Add the oregano, enough water to get the sauce to the desired consistency and cook a few more minutes. Add the parsley and mix together. Set aside.
    Make the Spaghetti: Bring a large pot of water to a boil. Add the salt and the pasta. Cook according to package instructions, until al dente. Drain the pasta but reserve about a cup of the pasta water. leave some of the pasta water in the pot with the pasta. Drizzle with olive oil and add some dried oregano and toss together.
    Serve the pasta topped with the meat sauce and lots of grated cheese. Kali Orexi!
    Notes
    Freezer Intructions: The meat sauce freezes well. Make a double or triple batch of it and allow it to cool to room temperature. Transfer to freezer-safe bags or containers and store in the freezer up to 3 months.

    In the right amount, cinnamon does go really well with meat! This looks great, nice and simple but full of flavor.

    I loooooove Kima. I usually slow braise it in the oven for an hour or two to make it extra tender as my Yiayia-in law usually leaves it simmering on the stovetop for a long time when she makes it.

    Hey Dimitra! My Dad used to make this dish (a little bit different) but i remember the first time I had it, because we’re Italian and it was such a different taste but oh my gosh Greek spaghetti is soooo incredibly delicious!! Thanks for reminding me I need to make some!! 🍝

    OMG!!! I love this chef!!! One night at an ex's sister's house in Greece she made spaghetti for dinner. When i had one bite i was amazed at this different flavour which she said was cinnamon!!!     Recipe idea: have you ever heard of a regional Greek American dish known as Cincinnati Chili? It's absolutely amazing! (Although there's a long running dispute whether it was first made by a Greek man or a Lebanese man, both of whom had restaurants in Ohio.) I'd be happy to share my recipe with you so you can "tweak" it, if you think it needs that! My family literally *begs* me to make this regularly. (I've even made it using Beyond Beef, for my vegan sister.)

      The man who came over here and created it was from the Florina region of Greece. the sauce is similar but has a Slavic Balkan influence as the people from the Florina region are Slavic speaking and culturally Bulgarian influenced hence that at the time the guy did not identify as Greek or Lebanese but as Macedonian which among Greeks of course is controversial.

      @@nikokatos I agree the inventor was most likely Greek, but as I wrote, a Lebanese man also claims he invented it. I wasn't suggesting it was one man who was either Greek or Lebanese -- I'm saying that two men both claim it.
      The only ingredient that seems to disqualify a Greek connection is the traditional inclusion of chocolate in the "chili," which isn't really chili at all.
      All I can say with certainty is that, whoever invented it was a genius, because it's one of the most "craveable" dishes I've ever eaten!

    Works well with Grated Halloumi cheese being a "GREEK" dish. Greeks have been cooking Spaghetti with mince for over 2 millenia. 🎉

    In Indian cooking, "kheema" is a sauce made with mince (ground) meat. Similar concept.
