Secrets of making thin pancakes with milk:
The main secret of the right pancakes is in the right dough. To make pancakes thin, the dough must be without yeast. In density, it should resemble liquid sour cream. The consistency should be homogeneous, without lumps.
A blender or mixer will help get rid of lumps. If you do not have this miracle of technology, it does not matter! You just need to first mix the eggs, sugar, and the main part of the flour, and then gradually add the milk and the rest of the flour.Be sure to sift the flour through a sieve.
To prevent pancakes from sticking to the pan, pour vegetable oil directly into the dough. Then the pan will only need to be lightly lubricated, which will allow us to save a large amount of oil. And our grandmothers greased the pan with a piece of salted bacon, only the salt must first be scraped off.
To make the pancakes turn into a hole and have a golden color, instead of vegetable oil, you need to add a few tablespoons of melted butter.Be sure to sift the flour through a sieve.What to do if the pancakes are still torn? We take part of the dough, add two tablespoons of flour to it, mix well and send it back. And vice versa, if the dough turned out to be thick, add a little milk to part of the dough and combine with the rest.
If you add a little cocoa powder to the dough, you get delicious and interesting chocolate pancakes.
And further. The dough must be infused for about 10 minutes so that the pancakes are more elastic.

Oh the Nalysnyky look so delicious Luba! My Baba and Mom made them all the time. My grandparents on both sides of my family immigrated to Canada from Ukraine in the 1900's. We always had savoury ones with a filling of farmers cheese - dry cottage cheese and egg and then baked them with butter, So delicious. I would love to try the sweet ones.

I lived and worked in Ukraine for 7 years and met my beautiful Ukrainian wife while there. Get there soon, sleep when you get home. FYI, in Ukraine these crepes are called "Blini" and are used like tortillas to wrap just about anything inside for a great meal!
