And for those who may think that you can only cook one egg at a time this way - Just get a bowl of ice-water, drop them in as they cook until you have as many as you need. And then empty them all into a pan of hot water for a minute or so, to re-heat just before you serve them. It may take a little longer, but it's a much calmer and more consistent way of serving multiple poached eggs.
