How To Make Eggplant Parmesan

  • Today we're making egg and cheese Neapolitan eggplant parmesan (parmigiana di melanzane). This was the way my Grandmother always made it for us growing up. Frying the eggplant discs in a simple Pecorino Romano cheese and egg batter is so delicious. The pieces are so good that you just want to eat them as is. But push on and make the parmigiana with a simple marinara, some basil, Parmigiano Reggiano cheese, and mozzarella. I hope you enjoy and learn how to make this eggplant parm recipe!

    ▪2-3 large eggplant
    ▪3 plus cups marinara sauce
    ▪1/2 cup grated Pecorino
    ▪1/2 cup grated Parmigiano
    Reggiano
    ▪1 pound block mozzarella
    ▪5 large eggs
    ▪1 plus cups flour
    ▪bunch basil leaves
    ▪olive oil for frying
    ▪salt/pepper to taste - plus salt for salting eggplant

    Jim I told my own Italian grandmother about you today! She is 94 and loved to hear that you’ve got me trying out some of our favorite recipes, this one included. Interestingly, she revealed she doesn’t care for eggplant parm, but made it all the time because the rest of the family loved it.

    I'm a BIG Eggplant Parm fan. I just really love Eggplant. I started making my Lasagna with 1/4" thin layers of Eggplant prepared just like you did here to replace every other layer of Lasagna noodles starting with a noodle on the bottom and finishing with a noodle on the top. One of my all-time favorite dishes!

    I love eggplant parmigiana! I grow my own eggplants in the summer, and they are great! Try adding a center layer of ricotta! Also I deep fry mine and coat with flour mixed with bread crumbs. To die for! Great tip with the trays! Thanks!

    when I studied in Italy I'd get this in a neighborhood restaurant and they'd serve it in little metal pans they cooked it in, it was insanely good with the crispy edge around the outside. I had never even ate a single eggplant in my life previously. I saw others with it and just asked what it was.

    My all time favorite ! I do remove the eggplant skin c a vegetable peeler before slicing and salting. Wow, never added pecorino to the egg wash ! Great idea ! Thank you !

    I left NY State 30 years ago. All my great friends were from the city. Being Hungarian it was a real treat to eat Italian at their homes. Your videos and delivery reminds me of those great times. Keep up the wonderful work you do.

    Am I the only one whose Mom peeled her eggplant? Sliced thin, about 3/16", she used flour/egg/flour, and just sauce and pecorino between layers. Sis makes it for me on occasion. BTW, I made your lasagna recipe - absolutely brilliant.

    These eggplant recipes are for me a meal in themselves or w a salad if the desire strikes. Just a quick fyi, some of my family’s names : Iacobetti- Giachetti- Migliaccio - so that’s one of the reasons why I so love this channel and his style of cooking !!

    That looks amazing. I have so enjoyed watching your cooking show. I do so just about every night after dinner. And I get hungry again every time! Eggplant parm is a dish I make often but I have never seen it done that way with no breadcrumbs before. I think I might like it it better than with breadcrumbs. I envy your son getting to try all your dishes. He reminds me of myself growing up at my mother and grandmother’s side at the stove. Best wishes, David

    That really looks promising. I tried about 2 or 3 other eggplant parmesan recipes on youtube, but they never turned out very well. This is actually the first time that I hear about draining the eggplant stripes with salt. It totally makes sense though so I will definitely try out your method.
    I really enjoy your videos, especially the different pizza variations, so please keep on making awesome content in the future.

    I'm fasting and this will be the meal to break the fast so really looking forward to trying it. The salt part seems like a really important part a lot would miss. like half of the recipes are from you now. Making homemade marinara sauce, meatballs, the parmesan cheese pasta with peas these have become my favorites in my rotation. I want to try your beef stew soon too.

    Im binging your eggplant series and have learned so much! Funny story....when I was about 5 years old..(.Im 72 now) I was watching my grandmother make eggplant and she was salting and pressing it and I asked her why. She said she was "getting the poison out of it" !!! And then she expected me to eat it???
    ...... I survived.

    Eggplant is my favorite vegetable. I live in Vegas, but when I return to Long Island to visit family I always make eggplant parmigiana. I also shop at Uncle Giuseppe's - one of the last places on LI where you can buy fresh mozzarella as it is prepared in vats of water.

    Does your use of salt right away keep the eggplants from getting brown? I was always told you had to cover them with olive oil to keep that brown color from forming after cutting. Maybe you just have superior eggplant! They look so beautiful. My variation is I sometimes use ricotta in addition to the other cheeses. My obsession for cheese knows no bounds...

    That looks amazing. Eggplant parmesan is one thing I struggle with (I usually prefer to eat it from an Italian restaurant), but I'm going to give this one a try and see if it turns out better than my previous attempts.

    I once salted eggplant and didn’t know I was supposed to rise the salt off when I was done. As you might imagine, the dish was inedible.

    Thank you so much for this video. My mouth is watering as I watch you and I swear I could smell that eggplant frying! My wonderful Italian landlady taught me how to make this dish many years ago, and you make it just like she did. As you mentioned,it's a lot of work, so you might as well make a lot. One thing she would do, was to make enough so that she'd have some leftover to freeze. She would fry and drain the eggplant, then layer it with waxed paper, put it into a zip lock baggie, squeeze the air out, and freeze it. Then all you need to do when you're ready to eat, is thaw it out, layer with sauce, cheese and bake. She said if you tried to freeze it with the sauce, it was too "mooshad", sorry, don't know how to spell it, but you know, mushy. Have you ever tried this?

      Frying a lot and saving in the freezer is a good idea. My Grandmother did that as well. I always forget to do it though lol.

    Easy way to remove water from eggplant and control salt is, Take a bowl 1/2 to 3/4th full of tap water, add 1 teaspoon of salt, mix well and put the slices of eggplant in that salty water. Make sure that all the slices are well dipped in salty water, you can add more water if needed or make more than 1 batch. Keep eggplants in water for about 30/40 minutes. remove from water in about 30 minutes. You will see that eggplant will remain white. Put all slices in a sieve. the salty water will drain in about 30 minutes. By that time you can make sauce ready. when the eggplant slices are dry, go ahead with rest of the process.

    i tried both just flour and breaded, prefer flour only way too heavy with the breading plus the breading sogs up from moisture anyways so whats the point
