I'm a BIG Eggplant Parm fan. I just really love Eggplant. I started making my Lasagna with 1/4" thin layers of Eggplant prepared just like you did here to replace every other layer of Lasagna noodles starting with a noodle on the bottom and finishing with a noodle on the top. One of my all-time favorite dishes!

I left NY State 30 years ago. All my great friends were from the city. Being Hungarian it was a real treat to eat Italian at their homes. Your videos and delivery reminds me of those great times. Keep up the wonderful work you do.
when I studied in Italy I'd get this in a neighborhood restaurant and they'd serve it in little metal pans they cooked it in, it was insanely good with the crispy edge around the outside. I had never even ate a single eggplant in my life previously. I saw others with it and just asked what it was.
My all time favorite ! I do remove the eggplant skin c a vegetable peeler before slicing and salting. Wow, never added pecorino to the egg wash ! Great idea ! Thank you !

These eggplant recipes are for me a meal in themselves or w a salad if the desire strikes. Just a quick fyi, some of my family’s names : Iacobetti- Giachetti- Migliaccio - so that’s one of the reasons why I so love this channel and his style of cooking !!
I love eggplant parmigiana! I grow my own eggplants in the summer, and they are great! Try adding a center layer of ricotta! Also I deep fry mine and coat with flour mixed with bread crumbs. To die for! Great tip with the trays! Thanks!

Am I the only one whose Mom peeled her eggplant? Sliced thin, about 3/16", she used flour/egg/flour, and just sauce and pecorino between layers. Sis makes it for me on occasion. BTW, I made your lasagna recipe - absolutely brilliant.
Eggplant is my favorite vegetable. I live in Vegas, but when I return to Long Island to visit family I always make eggplant parmigiana. I also shop at Uncle Giuseppe's - one of the last places on LI where you can buy fresh mozzarella as it is prepared in vats of water.
Im binging your eggplant series and have learned so much! Funny story....when I was about 5 years old..(.Im 72 now) I was watching my grandmother make eggplant and she was salting and pressing it and I asked her why. She said she was "getting the poison out of it" !!! And then she expected me to eat it??? ...... I survived.
I'm fasting and this will be the meal to break the fast so really looking forward to trying it. The salt part seems like a really important part a lot would miss. like half of the recipes are from you now. Making homemade marinara sauce, meatballs, the parmesan cheese pasta with peas these have become my favorites in my rotation. I want to try your beef stew soon too.
That really looks promising. I tried about 2 or 3 other eggplant parmesan recipes on youtube, but they never turned out very well. This is actually the first time that I hear about draining the eggplant stripes with salt. It totally makes sense though so I will definitely try out your method. I really enjoy your videos, especially the different pizza variations, so please keep on making awesome content in the future.

I just made eggplant parmesan and I didn't fry the eggplant for the first time. I baked the slices. I also put in my eggplant parmesan, spinach, sauteed mushrooms, roasted peppers and spiral cut zucchini. And all the other standard ingredients. I don't go heavy on the sauce. I go very light. I figure with all the moisture already there I don't need to go overboard on the sauce. Also, I like to be able to cut into an eggplant parmesan and have very definite layers. 90% of the eggplant I've seen prepared in my life are an oily, tomatoey blob. I love my eggplant parmesan because it has a lot of flavors and "feels" a bit more healthy and is hot and tasty and delicious. Wonder what you think about this? Anyway, long time fan.
My fav Food is eggplant parm. My 2nd are tamales. My 3rd is injera - all vegetarian. My fourth is the Carl’s Jr. jalapeño burger. If it’s good, it’s good!

Thank you so much for this video. My mouth is watering as I watch you and I swear I could smell that eggplant frying! My wonderful Italian landlady taught me how to make this dish many years ago, and you make it just like she did. As you mentioned,it's a lot of work, so you might as well make a lot. One thing she would do, was to make enough so that she'd have some leftover to freeze. She would fry and drain the eggplant, then layer it with waxed paper, put it into a zip lock baggie, squeeze the air out, and freeze it. Then all you need to do when you're ready to eat, is thaw it out, layer with sauce, cheese and bake. She said if you tried to freeze it with the sauce, it was too "mooshad", sorry, don't know how to spell it, but you know, mushy. Have you ever tried this?

A lot of people peel the eggplant. It's really just a matter of personal preference. So happy you enjoyed the lasagna!

Frying a lot and saving in the freezer is a good idea. My Grandmother did that as well. I always forget to do it though lol.
