At around 1:20 there’s a weird edit where Molly is talking about dry packed scallops and then without any transition is talking about wet pack scallops, but the edit makes it sound like she’s still talking about dry pack. It might be confusing for someone not already familiar.

Yeah, i wondered too. Dry are good, but dry let out moisture and make it bad cooking, so use dry scallops for good crust.

Bad edit at 1:30. You cut out the part where she explains that dry packed scallops DON'T contain extra water that will ruin the cooking process. Wet packed scallops do that.

Yeah, I'm not a huge seafood fan, so have not cooked a lot a seafood, and i was like....um you said dry-packed would be untreated so you won't get a good sear, so you should buy dry packed????.... makes me think i should buy wet packed!

Omg I love that corn stripping advice! I'm gonna use that from now on. I can't eat corn on the cob because of how bad it gets between my teeth, but I also feel bad bc I waste so much of the corn by cutting it off.. This totally mitigates that issue! You're a lifesaver Molly!!!!

Agreed. A real chef should be able to use as much of the animal as possible. Don't know why she would say that's gross...

I don't like the idea of just ripping off perfectly good pieces and throwing them away because they're "tough" or "hard to work with" and throwing it away when, with a little creativity, it could be made great.

I'm completely confused by the wet/dry pack at 1:14. "These are dry-packed scallops which means they haven't been treated in any way since they were removed from the ocean which means that when you go to cook them and you're looking for that golden brown crust a lot of water will come out flooding the pan and they will steam and you won't get that same effect so always look for dry-packed scallops." Is she describing wet-packed here?

I like that Molly slices garlic for shellfish and not crushing it to get a cleaner taste the works well with shellfish (scollops and shrimp particularly well).

OMG I actually love the scallop muscles too, stir fried with green chilli, and onion with a little salt, and sambal, so good... very sweet, and the texture is so unique.
