In this ep, Molly applies the smashburger technique (super thin patty!) to a sausage egg and cheese, with magnanimous results. She starts with breakfast sausage, to which she adds both griddled and pickled onions, spicy mayo, American cheese and an a pile of fluffy scrambled eggs! Ingredients :
PRODUCE
2 handfuls arugula
½ white onion
PANTRY
¼ cup mayonnaise
Hot sauce (such as Sriracha, Cholula, Red Clay etc)
2 English muffins, kaiser rolls, or brioche rolls
1 tablespoon vegetable oil
Kosher salt, freshly ground black pepper
DAIRY
2 slices American cheese
2 large eggs
1 tablespoon butter
MEAT (OPTIONAL)
6 ounces uncooked pork or plant-based breakfast sausage (loose or links)

It makes you human. To be perfectly honest, due to your cooking style and videos I now never forget to season anything, so thank you for that.
The best burgers I made (or ate at a restaurant) usually have a thin slice of tomato and a few strips of bacon on it, which also fits nicely with the breakfast style burger.
Glad to know that even the pros try to keep those plastic arugula boxes open before giving up :D

Molly's hangout/studio/whatever reminds me a lot of my college days in the mid-70s. Random buds and budettes in and out. No pretense. Just a laid back atmosphere. Good times. Oh, and Molly's cooking style is right up my alley. Always a pleasure to watch. Cheers!
This is probably my favorite of her recipes. I remember when she fist debuted it, and made one daily for a week.

Totally with you on how to scramble eggs. Perfect result. The only thing I do differently is to add a tablespoon (per egg) of water to get a little steam action on them.

This vid just popped in my feed. You owe it to yourself(selves) to use a blueberry bagel, cut side toasted/grilled/fried in bacon grease and use American cheese slices like traditional smash burger. The dehydrated blueberries caramelize into tiny explosions of sweetness that's perfectly matched by the umami in American cheese. Obvs use the bacon slices cooked to your preference (but totally make it crunchy) in your breakfast smash sando.

As someone who doesn't love an English muffin, this recipe got me very close to liking them! VERY delicious and VERY crave-able sandwich, and I will make this again to finish off my package of muffins (that good!)

I wonder if adding honey or maple syrup to the mayonnaise mix would help ton balance the spice and bitterness of the arugula. I wish I had ingredients to make right now, because my mouth is watering.
I made these today and maybe I made them wrong but to both our taste they were super heavy and very fatty. I'll try again (also with less salt) and more freshness maybe some lemon juice will cut through the fattiness...

I absolutely love this series- so much fun and so inspiring. But the audio mix in this one is distracting. I really just want to hear ever Molly has to say and she doesn’t need cheesy music in the background.
I feel like such a caveman toasting my muffins instead of grilling them, I will never make that mistake again. But to be honest, I will always put the egg over easy on my sando. That goosh of yolk! Thanks Molly!!
