    Oh, thank you so much. I really appreciate the duck breast tutorial. I want to raise ducks for meat, and I needed to really connect with a duck breast I know I will enjoy. This is it. Yeah!
    Moscovy duck breast is very different from all other duck breast meat, though. It's much more dark and rather similar to beef, or so I've heard.

    Something I did was cooking steak like this, Put other cast iron on top the steak, a Dutch oven. Just put heavy weight on it, which changes the texture and appearance. Is it good, I thought so. It's up to the person. But 7-bone, get the skillet as hot as possible, salt the bottom like salting the steak.

    Martha is one of the few cooking teachers who are interested in education.....teaching people serious about cooking. It's not quick and easy cooking "who has the time?" from the likes of Rachel Ray and even worse....Sandra Lee... ...and she could care less about entertaining her audiences with sensationalist yelling and screaming (hmmmm who could that be...). She certainly has her own style that is her's alone.....do it the right way for the best possible results. Love her. Ironic that the junk adds are for a processed meal delivery service for people too lazy to cook.

    I dont think you should sear steak with butter unless its clarified or else it will burn but clarified butter has a higher smoke point so it can take on more heat yet some how her butter didnt burn and scorch her steak

    Adding butter to a very hot pan would burn?? I was told to add avacado oil to butter to raise the smoke/burn point.
