Thanks for the wonderful footage, those auctioneers will always be a mystery to me. here in the Netherlands we have the flower market in Aalsmeer (perhaps the biggest in the world), where they use a big kind of clock with one dail, and the buyers have to press a button if they want to buy and think that the price is right. If you ever get the chance to come to the Netherlands, you should go and see this.
I would love to see this also. I've only been to the Netherlands once and really need to return. This video of the fish market is amazing. I was there and loved every second but I'm nowhere as good at video. Also, best sushi breakfast I've ever had!

2 to 3 meter tuna...i used to inspect fishing boats in guam and i used to see 6 foot tuna without tails that would be flown to japan and people wouldn't believe me when i told them about the size of the tuna i saw

It seems like a lot of what they are doing is for presentation? Or maybe it's what they always did? I actually had a chance to watch the auction back in 2014. It was pretty amazing. We were up early that morning at 2:30 AM to make it there on time to stand in line. I went to Daiwa Sushi after the auction because the line for Sushi Dai was so long. That fish was the best fish I ate in my life! Actually, the day I went to see you and Co-san in Shibuya I was online for Sushi Dai but didn't make it in because I was going to be late for your event. Apparently, three hours is not long enough for that place. Maybe it's overrated.

+anyname13579 It's relocating to an area called Toyosu, it's not too far actually. After having been around for over 80 years everything in Tsukiji is getting old. The buildings are not strong enough to cope with natural disasters and I guess the existing sanitation levels don't meet industry standards. In terms of timing, the Tsukiji area is going to be important in the Tokyo Olympics coming up so they're trying to get everything moving. as for the eels, filleting them while they're still alive makes the texture of the meat better ... or something along those lines!
+anyname13579 The way animals are killed actually makes quite a big difference for a decent junk of animals. If a animal is surprised when being killed their muscles contract. This is something you usually want to avoid with cows and pigs as it makes their meat though, but on something light like a fish, it might actually make the meat better. I guess for a more detailed explanation you would ask somebody who does this for a living.
Fish are usually gutted alive, whether in the market or back on the fishing vessel. Why? Well because it's easier that way, killing the fish before requires an extra step and is time consuming. I've worked on many fishing vessels before, and it's pretty horrid to see.
If you see the buyers, the frequent buyers, you'll see that they simply signal to the auctioneers with the amount they want to pay. It's like a fast-paced synergy they're doing there. :3
Both the auction and the market are free. To see the auction, you need to go there and line up, usually around 1AM. They put you in two groups and there are two auctions (yellow vests and green vests when I was there). After the auction you can wonder around the outer market and purchase whatever you like. You can skip the auction, of course, and most people do. I got to chat with a tuna inspector at the auction and posted it as my first video (nowhere as exciting or well edited as this) but I definitely think the experience is worth it.
You're obviously fluent in both Japanese and English, but I was wondering, do you ever get told that you have a slight accent when you speak Japanese to other Japanese people, or are you able to switch accents? I'm always fascinated when I meet bilingual people who are able to switch languages so quickly, and I Was just curious if switching accents was as easy.
+HumanoidSparky It's not really switching accents ... it's switching languages. I don't have an accent in either language so when I switch, neither accent affects the other ... if that makes sense lol
I stopped eating tuna because I fear that they will go extinct but I do eat tuna when I am in Japan. Maybe that is weird or inconsistent but that is what I do.
