- Guys, let me tell you, spaghetti Aglio e Olio is probably the easiest Italian recipe to make, everyone can prepare it, even my 2 year old son could create a dish like this, but apparently many people like to complicate their life and consequently also a dish as simple as Aglio e olio.

Did you Know Spaghetti Aglio e Olio is the most popular pasta in Italy?
No, I just figured out today!!! 😁
Nope I didn't
oh really? no sir i did not
thank you for telling us
wait really ? its definitely my favorite because it represents the flavors of italy without being too much and its perfect for a night dish , as long as you dont have a date afterwards 😂 . Greetings from Greece and Termoli .
Sometimes the most simple dishes are the most difficult to make in the right way. Bravo from the Netherlands.
So true!
I like the way you judge those Chefs in that quiet en explanatory manner.
Oh wow thank you, I’m glad you think so!
When I lived in Italy, aglio e olio is what they would give to kids when they come home from school. Probably my favorite pasta dish.
😍😍
I made it tonight after your version, I used 6 tsp olive oil for 4 portions, put pasta water in after 5 min, put the pasta in 2 min before they were done with more pastawater. Let it cook for 2 more minutes, added the parsley last minute, no cheese, perfect , creamy, but not a little bit oily- just not enough salt in the pasta water, needed a lit bit of salt on the plate.
Think about how many heart attacks these people would prevent if they just changed the names of some of these dishes.
Filipino Sweet Spaghetti is called as it is and not called Pasta with small meatballs or Bolognese, an actually good example which can shock most pasta enthusiasts but not be offensive by calling it something Italian.
Mamma mia that’s so true 😭
@@vincenzosplate then what is the hatred for macaroni and cheese? No one is trying to pass it as an Italian dish. The dish itself has evolved into an African American soul food staple. I admit box mac and cheese is disgusting. It's easy enough to cook from scratch
@@sumatra1421 you contradict yourself lol. Anyways, mac and cheese just is not Italian. In any way shape or form.
You Americans and your velveeta 😱😅
It also contributes to premature greying. Poor guys hair was jet black up until 9 months ago.
I was so excited when you said Food Wishes! Chef John is one of my favourites too. Any recipe of his I've followed has been fantastic. I'm going to let him off this half hearted attempt at a lopsided pasta because you can hear he isn't feeling well in this video. And now Vincenzo has joined him on my list of favourites.👌
I am thinking about roasting the garlic for this and trying it that way. Gonna make it for lunch tomorrow. 😋
That sounds fantastic, let me know how it goes.
I remember ordering this dish in a restaurant in Buenos Aires. The waiter said "You don't want that. It's just oil and garlic" as if I was insulting the chef. I ordered it anyway and it was wonderful! (BTW no cheese.)
Oh wow
I don't know why someone would order an italian dish in Argentinia (if you are visiting) but hey, can't go wrong with Spaghetti Aglio e Olio 😄
@@SirToby1076 How familiar are you with Argentina? Half the population is of Italian descent and Italian food figures very prominently in Argentine cuisine.
@@josephpanzarella1417 Argentinians are so Italian their word for eating comes from Italian and not Spanish.
I would never order that in a restaurant unless maybe if the restaurant is using some rare high quality pasta and extra high quality parsley and garlic that you can’t get at home.
I’d like to stop the world and cook aglio olio for everyone .
😍😍
Vincenzo …. You are an Awesome guy !
Gordon: Now let‘s put in some of the most amazing Beans.
😂😂😂😂
@@vincenzosplate ❤️🫶🏽 have a good day Vincenzo, Love your cooking.
I add some lemon juice to this at the very end. Really delicious and helps if you put too much chilly.
Sounds great!
I've to admit that once it's ready I like then to stir fry the pasta aglio e olio with a generous amount of grated Parmiggiano Reggiano (I'm a cheese lover) that melts nicely. 🙈
Hahahha that’s ok my friend if you really love to!
I LOVE SPAGHETTI AGLIO E OLIO.......ONE OF MY FAVORITES......SIMPLE BUT DELICIOUS......I WATCH YOUR CHANNEL EVERYDAY.....
Thanks so much
I have 5 bottles off extra vergin olive oil and garlic parsley and home grown calbrian chillis and homemade bread crumbs this might be dinner tonight
Awesome! Please try this recipe and let me know 😍
Always love watching youre video's Vincenzo you cook with love and passion and in the reaction vids you give good constructive criticism keep up the good work vincenzo can't wait to see youre next video
Awesome thank you! ❤ you're really kind
Thank You! I learned the recipe from a video and thought that you had the slice the garlic, I also prefer to crush it with a garlic press because like you said, it really brings out the flavors.
Exactly 👏🏻👏🏻
Love the reacting video vincenzo love your content your a amazing and fantastic UA-camr keep up the amazing and fantastic work
Thank you so much 😁
The best way to learn about Italian cuisine, is to learn from Italians :)
That’s sooo true 👏🏻 well said Anna! I couldn’t agree more
I don't know an Italian person in real life so I've been learning from Vincenzo and Ava. Now, I'm a snob lol! If I order carbonara and they bring me anything with cream or peas I'll be upset! And don't get me started on people making pasta in an instant pot! It's a sin!
@@SolSkinn luckily I never make pasta in instant pots etc, I only cook rice in a rice cooker x) and i don't know any Italian personally either, so Vincenzo is a great teacher in Italian cuisine :)
This is one of my favorite go to dishes in 10 minutes I can boil the pasta and make the sauce and when both are done at basically the same time so fast so easy and oh so so delicious
Sounds great!
In Roma we call it Spaghetti ajo e ojo (where j is the the long and strengthened 'eee') and normally we always do ajo ojo e peperoncino, adding red chili, and in this case is forbidden according to everyone I know of to add any cheese.
In Roma, we call cheese "caccio". Pronounced "KA-cho".

Everyone can prepare it? You don't know the Swiss Kitchen Dummy... May I put green peas in it, too?? Hahaha!
Thank you very much, Vincenzo, for sharing your wonderful video with us.
Greetings to Suzanne, to Sebastian, to your families in Italy and in Australia and to you from the Swiss Kitchen Dummy.
PS: what? My channel is not your favorite YT channel? Hahaha!
Haha my friend… you also could make this dish, believe menn
I make this regularly (last time yesterday evening), my wife loves it (she is a garlic girl), lots of oil, garlic and fresh parsley, simple and delicious.
Yummy, sounds delicious
I make it often as well!
Agreed with you! My family used to cook this all the time. ❤
This is so good (if made right, obviously)
I once saw this recipe of "Oil Free Aglio e Olio" and I don't even bother watching hahaha. As a vegan Aglio e Olio is my favourite pasta recipe! It's easy, quick and just so delicious. I always feel sad whenever a cafe/restaurant spoiled it! Like there was once I ate in a cafe here in Indonesia, ordered Aglio e Olio and it comes as a... Tomato based pasta. Why...
Oil free aglio e olio? 😱🤦🏻♂️ Omg people are mad!!
It's always better to make this dish at home
@@vincenzosplate Yup cause they're doing some oil free diet hahaha. Yes! I've been following many recipes and aim to be an Aglio e Olio connoisseur one day mwahaha
So they’re gonna eat a dish where the main ingredient is oil?? And also a dish with “oil” literally in the name?
@@avgperson6551 Exactly!! Hahaha
So only Aglio lul
When I make dishes I like to mince the garlic because I like those little pieces and chunks. But I respect those who crush their garlic as well.
great!
Ive made this so many times thanks to you vincenzo!!! Though i prefer the variation with anchovies!!!
Wow I love to hear that 😍
I'd love to try the anchovy version!
Hey foodies, today I found bronze die cut pasta imported from Italy at Aldi of all places. I bought the chitarra kind and will report back after I make some. It looks fantastic and was only $1.59 for a pound. They also had linguini and fettuccini.
that is great!
You make the best recipes Vincenzo. Since I discovered your channel I have been wondering about Lidia's recipes...

Oh you’re too kind, many thanks 🙏🏻❤️
@@vincenzosplate Grazie Signor! did i say it right?
@@vincenzosplate p.s: never studied Italian
you can also try to slice the garlic with a razor blade 🤣 like in good fellas. thank you vincenzo, i will definitely try to crush the garlic next time
Experimenting with different techniques can be fun! Crushing garlic adds a unique flavor to dishes. Remember to handle sharp objects with caution and enjoy the process. Happy cooking! 🔪👨🍳
I like it with some pepperoncino , breadcrumbs and a few drops of lemon! Maybe thats not going too far, especially in the region of campania
sounds delicious
Grazie Vincenzo! When I was in grade school (long time ago), I had an Italian penpal from Italy (San Severino Marche). We still keep in touch now and then! Anyway, my mother (who is not Italian) made the best dish and I would like to share it with you! It is oven roasted chicken thighs with olive oil, garlic and hot pepper flakes. Roast that together, then add chopped spinach (frozen works very well), linguine and lots of grated cheese. Molto bene! Thanks for your video and cheers from your Canadian fan!
Hey there! That dish sounds amazing! It's always great to hear about the memories and recipes people have from their travels. I'm happy to have inspired you and I appreciate your support! 🙌🇮🇹
When my kitchen cabinets are bare I turn to this 🤷🏼♂️
Making some tonight!!!
awesome! Have you made it? 😋
I did! And my husband said it was definitely one of the best pasta dishes he has ever had. He loved that I added a few red pepper flakes too. Simple but complex at the same time.
How these random channels get so many views for Italian recipes while the true recipes of Italia Squisita have almost none always baffles me.
I don’t get it too
Vincenzo, Italian Squisita and you. The triangulation for Italian cuisine precision. lol
vincenzo, the more i am watching your videos the more i think you are far too nice and forgiving towards some youtubers ❤
Thanks for your observation! While I strive to be respectful, I also believe in sharing constructive feedback. It's important to maintain a positive and supportive community. 😊👍
Vincenzo I am a HUGE fan of yours and a amateur chef. I would love to see you react to chef Jean-Pierre Aglio e Olio. I think you will enjoy it.
Hey there! Grazie mille for your support, I truly appreciate it! It's always great to connect with fellow food enthusiasts. Keep an eye out for it, and thanks again for being a fan! 🇮🇹🍝🔥
I just made aglio e olio for dinner tonight. I used spaghettoni rather than spaghetti because I like the texture better. I think I did a pretty decent job.... far from perfect, but very delicious!

W/ lots of extra virgin olive oil
Awesome 😍
I find it kind of interesting how Vincenzo says in every video: "You need Pecorino, you need San Marzano you need this and that to produce flavour..."
And here he's just like: "You need olive oil and bread crumbs - no cheese!"
What else can you say... I'm an open book; there's always something new to learn everyday!
One thing I'll say, no matter what video it is. Thanks to youtube food channels for introducing Aglio e Olio in my life. It's almost routine every week for me now. Such comfort food.
Oh wow this is great to hear 😍 it is comfort food at its best
@@vincenzosplate Yes! And i use many of your methods as well, Vincenzo! It's nice to learn authentic Italian cuisine as an Indian guy, keep up the great cooking!
I was so skeptical of this dish. Oil and garlic? Like huh...
So I tried your recipe, and JESUS. How are you Italians coming up with such a tasty dish with such simple ingredients?!
19:33 - 'I don't see enough extra-virgin oil (the most important thing) in all the recipes. I want to see more!' 👍
Hey Vincenzo, I was wondering what the most common technique of eating a neapolitan pizza is (fork and knife, or hands)
HANDS!!
I adore aglio è olio! Sometimes i do opt to add some pecorino and a bit of lemon zest. Not traditional but delicious.
I have to say I agree with Vincenzo 100% about the lack of added oil in these videos, the star of this recipe is the garlic and oil. A little bit of cheese is ok but not so much that it overpowers the other ingredients 🙄
great, well said 👏🏻👏🏻
Cmon, no cheese here, peoples put cheese everywhere...
First, also love your videos
Thank you sooo much 🙏🏻 Have you ever made Aglio e Olio?
@@vincenzosplate No but I've made a lot of Italian dishes one of of my best friends was born in the US but moved back to Italy at a very young age and taught me a LOT about traditional Italian dishes. Italyian and Asian dishes are my favorite !!
Aglio e olio e peperoncino 👌 eating right now
Esatto 👏🏻👏🏻 quello sarebbe l’ideale!

Question, why do they constantly feel they need to say you shouldn't rinse the pasta with cold water?! Who the heck even does that?! Who even thinks about doing that?!
Only time I do that is if I make a pasta salad and need to cool the pasta quickly, but I just can't understand rinsing pasta with cold water in a normal hot pasta dish, it makes zero sense!
she did turn it into light cacio e aglio e oglio
Lol they love to add a truckload of parmesan (which I do too 😂) but they don't want to add more olive oil 🤔
True ahaha
is Aglio e Olio supposed to be creamy or oily?
Oily
zuppa di aglio e olio by Lidia Bastianich
🤣🤣🤣
Can you put lemon juice on this particular pasta?
In the first video that garlic is BURNT and I just KNOW it tastes bitter. Ugh. Nooooooooooooooooooo. 😱
I totally agree, burnt garlic does taste differently, and it's not even the good kind of taste. 😥
I am determined to follow the traditional way, but was just watching Babbish’s video of the dish and he did everything right, but then added lemon. What are your thoughts on this? Is there a dish similar to Speghetti Aglio e Olio that uses lemon?
apparently it is a recipe from a movie called, "Chef" that he is following, so perhaps it is the movie that gets it wrong.
Hey there! 😊 I totally agree with you, the traditional way is the way to go! As for the lemon, it's not typically used in Spaghetti Aglio e Olio, but there are some dishes that use lemon like Pasta al Limone. Give it a try and let me know how it goes!

I sometimes do, but I'm doing this for the people who needs to know that there are far better options and recipes for them to try. I want to teach and help them understand that there are the good recipes at the same time the bad ones. I hope I was able to rely this message to you.
Breadcrumb,Breadcrumb, Breadcrumb………keep it simple…..made it last night
well said!
When garlic is browned it's not burned. If cooked in a lot of oil slowly, it's confit, which is different than sauteed. And the allicin is gone, replaced by sweet, savory, and mildly caramelized. If browned in a sauteed way, then you can get different elements of caramelization which CAN add a bitterness if gone too far, and it gives it a different texture, that I would describe as sticky and chewy. In either case, you make too much of the "bad breath" quality. You always speak as if garlic cooked in any manner has the same bad breath characteristics. Americans do sometimes use too much garlic, but many of us also have a more scientific understanding than old world cooks stuck in myth and legend, and we use a greater diversity of cooking methods utilizing this knowledge.
