That lasagna looks amazing. The recipe, all the different components, is why I have to meal prep and freeze dishes. If I am going to destroy my kitchen and cook for couple hours, I would quadruple that recipe and put three more of them in my freezer. LOL Lovely dish!
I really like seeing vegan cooking. We are eating mostly vegetarian now (and I eat gluten-free for health reasons), but are getting a little tired of the same recipes over and over. Lasagna is one of my favorite foods, so I definitely want to try something similar to this. It's amazing how you can just throw together some ingredients and make something ridiculously delicious out of it! Also, 4 videos this week!?!? Be still my heart!!!
TIP: I chop up my cauliflower leaves & stems, and also celery leaves and the stem parts, and I store them in a jar in my fridge… then I add them to smoothies. Works great, prevents food waste, and stretches out our food (which we all know is crazy expensive these days). Have a great upcoming weekend everybody!! 🌎💦Ⓜ️ary🌻🌸🐣

Awesome video. Here in Slovenia most of the fruits and vegetables are package free and you can totally shop with your totebag. I was suprised that there is so much plastic in Danish stores which I always considered better educated on the matter. Also I love that you are point out that we should buy local seasonal produce! I regulary check the local website that tells me which produce are in season. I also love that our supermarkets have country of origin written under each produce and that makes it very easy for me to be mindful of that.
I think zero waste shopping is "easier" when you don't live in Italy. I'm not saying that we don't have places where you can buy plastic free products, because we do. For danish or british people, carbon footprint aside, buying either spanish or italian oranges is the same. Main thing: they have to come without packaging. In some periods of the year a couple supermarkets here sell pistachios in bulk or plastic free oranges. Problem: the pistachios come from Turkey and are quite cheap (ours are more expensive and come in plastic). The loose oranges may come from Spain (towards the end of the orange season), whereas the remaining Italian ones are pre packaged. Same goes for the bulk section: almost everything comes from abroad (we have our own lentils, beans, nuts and hazelnuts). Those who are only interested in spending less or buying plastic free only end up getting whatever is suitable for them. Not everyone cares about buying what's in season or what's local to them. At this moment in time I'd rather buy italian and support our economy (I still buy bananas, I'm not perfect) even if said products come in plastic instead of buying loose spanish oranges. Small shops are another matter.
I've seen one place that has "spring mix" / mixed leaf greens in bulk but its no where near where I live so I just buy a regular head of lettuce. But it does exist! :)
That’s funny because I live in the southwest and our Walmart always has a lot of packaged veggies. I prefer Albertsons because their fruit and veg has a ton of unpackaged options.

It isn't too hard to find plastic free or minimal plastic leafy greens in the US, especially for larger leafs like kale. Not sure I could find any spinach options without packaging here though. Berries are the hardest out of them all, unless I go pick them fresh, or maybe the farmers market in summer there are no options.
The plastic in the produce section is crazy in my country too. The thing is they never used to do it. If you wanted a bag you could grab one off the roll but things weren't pre packed, they've only started doing it more recently. No idea why especially considering people are trying to transition AWAY from stuff like that. I don't need my lettuce or capsicums pre wrapped in plastic. Just put it in your shopping bag and wash it at home 🤷♀️
@Miro Kai I did not know that, thank you for the explanation. I know that if you store lettuce in a plastic bag it lasts much longer. I buy mine unpackaged and then reuse a big ziplock bag to store them. I just saw very recently those plastic mesh bags being replaced by cotton mesh bags. I don't know if it's much better since cotton uses so much water and pesticides to be grown 🙄🙄🙄.
@Miro Kai I don't know about cucumbers, but they do that with courgettes too here, and they definitely last longer without the plastic - at least in my home (I've tested both cool room, fridge and kitchen counter storage, there's a massive difference, the wrapped ones get mold)
@Miro Kai yeah, the only reason I tested it myself is that I found the wrapped ones I bought were rotten/moldy either at one end or various damaged spots much more often than the unwrapped ones (close to 100% more often TBH) and I wondered if that was just because the wrapping was hiding the damage
So fascinating - in South Africa we have leafy greens unpackaged almost everywhere but cauliflower is ALWAYS wrapped. Closest is the one company that uses biodegradable container and cling wrap
That and broccoli. It's so infuriating. We've found a business that combines produce from different farms and assembles it into combo boxes, but I wish we could get all fruit and veg without packaging at normal grocery stores.

Interesting video, as usual! One question though: why do you peel the zucchino? 💔 I don't know what kind of squash/zucchino it was specifically but the zucchini peel is totally good to be eaten :)
I just use them as other greens and add them to stir fries or pasta sauces. The toughest ones I slice thinly and add to the boiling water together with pasta while it's boiling, drain them with the pasta and they come out soft. They also freeze well, so if I'm not using them immediately I'll just chop them and freeze and dump in my pasta water or sauces when needed 😊
Why do they wrap the veggies in plastic, like cucumbers & tomatoes? Here in Texas most of our vegetables & fruit (unless they are tiny like berries or baby carrots) without packaging. Maybe Texas heat and plastic wrap don’t mix?
O mommy! In Poland I can buy almost all veggies and fruits without packinging, even in conventional supermarket. Why there is no tomatoes without plastic?! Scandal!

Just a tip: boil the water in a kettle rather than bringing it to a boil on the stove. It's much more energy efficient that way
