OLD SCHOOL BUTTERSCOTCH MERINGUE PIE(FRIDAY NIGHT PIE SEGMENT)

- This is the 2nd of my 6 week segment of my old school Friday night pies
This is an awesome pie to make for your friends and family
Its very very easy and simple to make
BUTTERSCOTCH FILLING RECIPE
1 c. brown sugar
1/4 c. cornstarch
1/2 t. salt
2 c. milk
2/3 c. heavy cream
3 T. butter
2 t. vanilla
3 egg yolks
add all ingredients together in pot and cook until mixture is thick
usually takes 5-8 minutes
pour mixture in deep dish pie shell
top with meringue and cook in 350 oven until brown
MERINGUE RECIPE
4 egg whites
4 t. sugar
1/8 t. cream of tarter
1/2 t. vanilla
ADD egg whites to mixture and whip to soft peaks
add cream of tarter and mix 1 minute
add sugar and vanilla and whip to stiff peaks

I learned to make Butterscotch pie from my grandmother and mother. Our recipe is very similar to yours, except we use the dark brown sugar and a graham cracker crust. So good! Something I learned from grandma is to use a double broiler so there's less chance of the filling burning to the bottom of the pan. It takes a little bit longer to thicken up, but it's so worth it.
My grandma makes this for every Thanksgiving and Christmas. A staple/tradition in our family and she finally passed the recipe down to me 🖤
I am definitely going to try this!! I have never had butterscotch pie!

My mom is from Tennessee but I grew up in Pittsburgh and she makes me this pie every year for my birthday! Sooo sweet but definitely worth it once a year.

My grandma’s name was Lily. She made a pie with chocolate pudding on the bottom and butterscotch pudding on top. She put meringue on top and toasted it. It was delicious! We always call it the Lily Pie. I make it every Thanksgiving and Christmas. Chef Jeffrey, this sure brought back some wonderful memories

I'm sorry, I forgot to ask you something. Don't mean to be a pest. My aunt was born in the late 1800s. I adored her and she was the best cook in the world. Every time we went to see her she would have a caramel cream pie waiting for us. That was the best pie I've ever had in my life! Have you ever made a caramel cream pie? I have looked everywhere for a recipe and can't find one. I've about given up. lol

Question. Does yours taste like butterscotch? Mine has a sweet taste to it. It’s good but doesn’t taste like butterscotch. Am I doing something wrong? I make it just like what you do, except I don’t use cream. Does that make the difference maybe?
