  • This is a very decadent pie.
    Butter Pie Crust
    1 1/2 cups all-purpose flour
    1/2 cup very cold butter cut into small squares
    1/2 teaspoon salt
    1 large egg yolk
    4-6 tablespoons ice water
    Filling
    1 1/2 cups dark brown sugar
    1/2 cup all-purpose flour
    3 cups whole milk
    1/2 teaspoon salt
    4 egg yolks
    2 teaspoons vanilla extract
    3 tablespoons butter
    Meringue
    5 egg whites
    1/4 teaspoons cream of tartar
    scant 1/2 cup sugar
    1/2 teaspoons vanilla extract
    A few drops of almond flavoring

    When I first watched this video back in Dec. 2014, I never dreamed that 5 1/2 years later I'd be watching it again, only this time with tears burning my eyes...It's been about 2 months now since the shocking death of Miss Phyllis Stokes, & I still feel a true sense of loss having been a subscriber to this channel for a very long time...She was such a dear woman with a calm, soft-spoken voice & that special knack for teaching people the fundamentals of family cooking...May she be at peace & free of pain...Her legacy will live on...

      I’m really glad to see her son keeping the channel going. I really have enjoyed his content and I know he’s working hard trying to do videos that phyliss would have done and while he’s doings fantastic job, we miss his mother dearly and I m sure he does as well tho.

    I'm 72 yrs old.
    Butterscotch Meringue Pie has been my favorite pie since I was a toddler.
    My mother was a phenomenal baker and cook.. She made everything from scratch.
    Mother didn't teach us how to prepare food. Her kitchen was her domain and off limits during food preparation.
    Watching Miss Pjyllis prepare this pie reminds me of.my mother's ingredients.
    I'm looking forward to making this Butterscotch Meringue Pie and being transported back to my childhood with the taste of the first bite!
    Miss Phyllis left us with a warehouse of amazing recipes! Thank-you!

      I agree. I still watch her tutorials if I'm fixing a recipe I've never made, or sometimes I just like to listen to her sweet, calm voice. I truly miss her but I know she and Mr. Bucky are in a better place!🙏

      Did you ever make the pie? My mother used to make this pie on Thanksgiving and Christmas and it was nothing short of awesomely delicious.

      It has been lost!! I try to use all the old recipes I can. They are so much better than some of this modern day stuff. These younger generations tho don’t want to cook at all, they all eat out every day so all of the old tips & tricks are gonna die with all of us that currently use them. That’s gonna be a sad day when the last one of us are gone

    I came here looking for an old fashioned butterscotch pie recipe and found this gem. My 80+ year old Mom had long talked about Sunday dinners with her aunt and uncle, family visits with her Mom and sister while her Dad fought in WWII.
    Last night she described the butterscotch pie with graham cracker crust, the filling cooked on the stovetop.
    This looks like it’s the one. The pie crust is a nice bonus looks like mine but with an egg added.
    I am very glad this channel is still here thank you

    My Mom taught me that you can be sure not to form a skin if you lay a piece of plastic wrap directly on the custard, Still put the lid on.The plastic will also catch most of the condensation if it occurs while it cools. This seems to be handy for people who have kids interrupting them while they cook.

    Excellent recipe and instructions. I love your idea of rolling out the crust using plastic wrap. It seemed to make it so much easier to transfer and roll. I love butterscotch pie. Haven't made one it years. My grandma made the best. I don't have her recipe. Definitely trying yours. You gave out so many good tips. Thank you for taking the time to do this for all of us.

    You are my go-to cook and baker, Phyllis! I'm so glad I found you last month!!! Thank you! This looks delicious! I've never heard of butterscotch pie. I'll have to try it. Did you know that you can make your own brown sugar by mixing a little molasses with sugar? It doesn't take much molasses. I start with a cup of sugar and a few drops (maybe half tsp.) molasses in a baggie, then work it in by squishing and squeezing the bag. Add more molasses to your desired darkness.

    My Mother made this pie for the Holidays. A few of your steps were different from Mom's and she used a double boiler instead of putting the pan directly on the heat, but the ingredients are nearly exactly the same. This is the most delicious pie and I'll make it today and walk down Memory Lane. Thanks, Phyllis.
    PS: Mother's recipe called for 1/2 cup chopped pecans in the filling.

    Since I have started watching you Phyllis I absolutely love your videos. I have started taking a new interest in cooking and everything I decide to make has to come from your video. I started out watching numerous other videos but yours are the best because you were the best. I actually feel like I know you personally. I love your dogs. I have a senior rat terrier and a senior Chihuahua who stick to me like glue. Since our children are grown and have children of their own they are our babies. I used to have a puddle at I adored her. Puppies are beautiful. I have got to find that chocolate meringue pie! Merry Christmas sweet woman!

    What a great pie Phyllis...I wrote down the recipe and will make it this week..thank you so much for sharing.
    I love, love your channel. Keep the recipes coming. I did make your hamburger and hot dog buns and hubby says, never buy from store again...gulp!...so now I will be baking them..they are truly delicious.
    I do have a KitchenAide mixer with dough hook, so that is so helpful...thanks again sweet lady.

    I watched the chocolate pie tutorial just before seeing this one, I’m surprised that Phyllis tempers the eggs, that’s something that at least 3 generations of my family have never done, and here is why, if one adds the eggs after mixing all of the dried ingredients then add the milk, everything heats up at the same time and then there won’t be any scrambled eggs. The one time I did temper the eggs is the one time I failed at making a pie. If one has always tempered the eggs, just keep doing it, but it’s a step we’ve (family) always skipped. Back to the chocolate pie,
    towards the end of cooking the pudding, a minute or so before it’s at the desired thickness, if you add a cup of coconut and a cup of chopped pecans, you will have a German Chocolate pie much like the ones that Marie Callender served in her restaurants, and it’s awesome!

      Thanks Ange. I was hesitant in making this pie on video because it is so rich.
      We can only eat a small piece, if we eat a normal size slice of this pie we get sugar overload and have to go eat a piece of cheese or some other type of protein to get the sweet taste out of our mouths

    I don't know how I missed this recipe. I've been looking for a butterscotch pie recipe for a while. (I recognize that vanilla---Aldi? I love shopping at Aldi!) I wonder if it would be good as a cream pie (I made a chocolate cream pie a while back but at the end, realized I had no whipping cream so I made a meringue instead). THANKS for this recipe!

    Newer rubber spatulas are typically made out of heat-resistant silicone. I don't know whether they hold on to fat and oils or not but I've had no issues using them to spread meringue out over pie.

    I've now watched every single one of your meringue pies and am dying to make them, but am honestly intimidated by the meringue part of it! I'm afraid I won't know if the peaks are properly stiff and that I'll burn it! I'm just going to have to have at it and go for it! Thanks Phyllis for your videos, your my go to cooking channel now!       I think you can do this and just keep in mine if the meringue doesn't turn out to your liking it will still taste good. When I first started making pudding type pies sometimes the filling would not set properly and we had to eat the pies with a spoon and guess what? they still tasted very good.

    Yumee, my favorite. I have always used light brown sugar, no real reason, but I think I will try the dark. Think it might have more flavor.

      As I recall this pie was too warm to cut and I wanted to finish the video and get it loaded. If you cut this kind of pie while it's still warm it will be a little runny.

    I wonder if we will be able to bake in heaven and the new earth coz I will look for Phylis and give her a great big hug and hope we can bake together. I never got to send her any messages on here and was soo sad to learn that Phylis and mr buckey have gone from this realm to be with the Lord although we rejoice when someone we love goes home and I know in my heart that everyone loved her.     Dear Ms. Stokes,
    Butterscotch pie is my favorite. My grandma used to make it for me. I've been trying to make it for years, but mine always turns out like soup. I tried to make it by watching your video, but it still turned out soupy. Any idea what I am doing wrong? Thank you so much!

    Phyllis, the story my Mother told how she came to have this recipe is a tad interesting. In the late 1950's, a friend of Mother's had purchased an expensive French cookbook having this recipe. The woman allowed each of her friends to copy only ONE recipe from the book, and the Deluxe Butterscotch Pie was the one Mom chose. Do you have any idea which French cook book it might have been? I thought perhaps the obvious answer would be Julia Child, but I can find no evidence of the recipe being one of Child's.

      This is a 10" Pyrex pan with the little extra lip at the top which is usually used for fruit pies.

    Do you HAVE to blind bake the crust?

      The crust needs to be fully baked because it's a cream pie.

      You can serve this as a pudding, it will form a film on top when cooling, that film is my favorite part.

      Phyllis Stokes I made this as a pudding last night, and you weren't kidding, it is very rich. After a few bites I slipped into a sugar coma and slept for an hour. But yum yum!

      To show a slice of the pie I would have had to refrigerate it for many hours since it's a cream pie.

    Very few people make their own pie crusts these days, and you can sure tell the difference. Those roll out Pillsbury pie crusts just dont cut it! Terrible!! I think that kids are conditioned to think that is all there is!!

    Phylis, I’ve never seen anyone cutting a slice of BS pie. Does it firm up enough to slice like a regular pie?

      Like any cream pie it needs to be cold. Let cool to room temperature and then refrigerate and
      it will slice just fine.
