OLD SCHOOL CRUMBLE COFFEE CAKE

They will be wanting you to this cake many times
Its actually a very easy cake to make
Ingredients
For the Cocoa Filling
1 cup light brown sugar
2 tsp cocoa
For the Streusel:
1 cup granulated sugar
1 cup all-purpose flour
2 tsp ground cinnamon
¼ tsp salt
1/2 cup unsalted butter diced
For the Cake:
3 3/4 cup all-purpose flour
2 ½ tsp baking powder
3/4 tsp salt
¾ cup unsalted butter , at room temperature
1/2 cup brown sugar
1 1/2 cup granulated sugar
3 eggs room temperature, large
2 tsp vanilla extract
1 1/4 cup whole milk
Instructions
For the Cocoa Filling
In a small bowl whisk together the brown sugar, and cocoa then set aside.
For the Streusel Topping
Add the sugar, salt, cinnamon, and flour to a medium bowl. Whisk together then add the diced butter. I usually use room temperature butter for this but you can use cold butter too.
Use your clean fingers to press and crumble the butter into the dry mixture. Once you have a crumbly mixture you can set it aside. For larger crumbles try pressing a large handful together and break apart into large pieces.
For the Cake
Preheat oven to 350F. Line a 9x9 inch pan with parchment paper, or grease it, and set aside. Sift the flour,, salt, and baking powder into a large bowl, whisk together and set aside.
Beat the butter, brown and granulated sugar in a stand mixer fitted with a paddle attachment or a large bowl If using an electric hand mixer. Mix until light and fluffy then Pour in the vanilla then add the eggs one at a time while mixing on low. Scrape the bowl down then add the milk and mix until combined.
Add the dry mixture to the wet and mix until just combined then use a spatula to scrape the bowl down and mix any stray bits in.
Pour half the cake batter into the prepared pan and smooth out. Sprinkle with half of the cocoa brown sugar filling and spread evenly over the batter. Spread the remaining batter over the cocoa brown sugar filling moving from the center to the edges top with the remaining cocoa sugar filing. Top with the streusel and pat down and bake at 350F for about 50-55 minutes or until a toothpick inserted in the center comes out clean. Allow to cool in the pan for 20 minutes before cutting.
Notes
Measure your flour correctly! Adding too much flour to the recipe is the most common mistake. The best, and easiest way to measure flour is by using a scale. If you don't have one then fluff your flour with a spoon, sprinkle it into your measuring cup, and use a knife to level it off.
If you're enjoying the coffee cake the next day give it 10-20 seconds in the microwave. It's SO good just a bit warm.
If you don't want to get your hands messy then pour melted butter into your streusel mixture and mix with a spoon or fork to get those clumps.
Try mixing in a cup of chopped toasted pecans with your streusel topping for extra crunch.

Looks really good and soft and fluffy. i will give this recipe a try. Years ago in California all the county jails in California San Diego made these cookies that were so good I'll never forget them 🍪. I've been baking for quite a few years and tried to re- create those California San Diego county jail cookies but haven't come close. There hand size, not to thin or to thick, soft and chewy inside and golden Edges, they made chocolate chip cookie, sugar cookie, peanut butter cookie, white chocolate macadamia nut cookie. Still to this day i remember getting them for lunch with a sandwich and watered down soup.

WOW I have never heard of putting cocoa in the filling for coffee cake! I want to try that. I LOVE crumb cakes. I'm with you on the pie crusts. My fave are the Kroger brand deep dish. I swear they are better than any name brands! I can't wait to get your cookbook.

I'm on the healthier side of products, i.e.organic eggs not regular eggs, almond milk not dairy, cane sugar not refined sugar etc. Do you think these substitution can ruin the final results,? Hi Jeffrey this cake looks fantastic just like the one I grew up eating in junior high! So delicious and moist… I was wondering since I just moved to a new town after living somewhere for 40 years I’m trying to ingratiate myself with the new neighbors so I wanna bake this cake to make some new friends in the neighborhood. On the recipe you have it says 9 x 9“ pan but the one you cooked it in was 9 x 13. Can I cook it in two 9 x 9” pans using the same recipe? Please let me know

Oh wow… This cake reminds me of a coffee cake that they made in junior high for nutrition when I was a kid at Bancroft Junior high school in Hollywood California! Only I think this one had sour cream in it but it looked exactly the same! Just looking at it gave me this funny feeling in my stomach of being a little kid again wow I can’t wait to make it! I just found your channel a couple of weeks ago and I’ve been thumbing up your videos, I’ve also commented and the first recipe of yours that I’ve tried was your old fashioned old school recipe for your homemade/scratch butternut cake. Before now I’ve never even heard of the cake so I made it for my mommie for Mother’s Day, my mommie isn’t really a big cake or sweet type of person (she’s not but she will have a couple of pieces here and now when it’s made especially for her anyways. We’ve never had this cake before and when I finished it and the frosting it was really late on Sunday night and she still waited for me to finished it up and I fixed her a small slice before bed and she could not stop eating this cake and she could not stop talking about how good it was.. we loved this cake so much and it really was not to sweet for my mommie. Tysm. I absolutely LOVE THE FACT that you write down the recipes and the directions in the description box also Chef. That’s a very important part of why I love your channel. I love that and I appreciate you so much for that and for you describing what you doing in the video also. Your channel is so important and I love everything and I love how helpful you and your videos are and how important it is that you give and described everything both in the videos you do and the writing of everything you share in the description box. I really cannot understand other people “that give” their recipes within the videos ( bc they always leave out something very important to their viewers. Idk why others just do not give the directions and the ingredients and amounts down in their description box. Even give another address for another page to the recipe instead of the recipe. This makes no sense especially saying the recipe will be posted on their website later instead of just putting down the recipe below in the description box. The less milk. The thicker the cake. It won’t spread
