OLD SCHOOL CHEESECAKE

- 1 1/2 cups finely crumbled graham crackers
6 tablespoons melted butter
1/4 cup sugar
1 pound cream cheese
1 1/4 cups Sugar
1 teaspoon Vanilla Extract
3 Large Eggs
1 cup Sour Cream
1/8 teaspoon Salt
Prepare graham cracker crust - mix together with a fork until all ingredients are moistened. Spread the mixture evenly in 10 inch pan. Using your fingertips or the flat bottom of a drinking glass, firmly press the mixture over the bottom and 1/2 inch up the sides of a pan. For a crunchier crust bake in a preheated 350 degree oven until lightly browned, 10-15 minutes
Preheat oven to 300 degrees. In a medium bowl, beat cream cheese until creamy, about 30 seconds. ADD sour cream c Do not over beat. Gradually beat in 1 cup sugar and vanilla extract. Beat in 1 egg at a time, just until incorporated, scraping the sides of the bowl and the beater after each addition. Scrape the batter into the crust and smooth the top. Place on a cookie sheet.add 1 cup of water to pan to prevent cake from splitting and to cook evenly Bake until the center just barely jiggles when the pan is tapped, 45-55 minutes.
Remove from oven and continue to cool in the pan on a rack for at least 1 hour.
Let cool completely in the pan. Cover and refrigerate for at least 3 hours preferable 24 hours, before serving.

One time I was in a cafeteria and ordered the cheesecake, I cut into it and a big lump of cream cheese came out.
I also love plain cheesecake.

With the cream cheese
The issue with cheesecakes Jeffery, is that even with a low 10" cake like this one, that.... is maybe only two, at most three, pieces. And, after my semiannual doctors visit, I have been know to make as many as nine cheesecakes in four months 7" to 10", and since I'm a widower, I alone eat most of them. I give some to people, but I indulge myself (sort of like a buttermilk pie - it's NOT a negotiable commodity). Then I have to go all nazi on my diet again to stay on my Dr's good side.

You have sugar listed twice in recipe. Do you need that much sugar. You have 11/4 cups and 1/4 cup.

In your VIDEO you said to bake @350 in your recipe instructions it states to bake @300. SO WHICH IS IT!!!!?????
