SARDINIA, ITALY - Today we have the once in a lifetime opportunity to spend time with Paola Abraini, one of just three people on earth who have mastered the art of making su filindeu - a pasta that’s from the mountains of Sardinia. We’ll learn and get a demonstration of exactly how she makes it, get to try making it ourselves, and then we’ll eat it the traditional way they eat this rare pasta in Sardinia!
Friends in the video:
Edoardo Celadon (@MostOfItaly www.mostofitaly.com/) - Huge thank you to Edoardo who can arrange you the best and most authentic food experiences throughout Italy!

Also known as Threads of God, Su Filindeu is the rarest pasta in the world, and something only three people on earth can actually make correctly. Chef’s around the world have tried to make it, but failed. And something I found very interesting is one of the biggest Italian pasta manufacturers tried to make a machine to produce it, and they also failed.
To make Su Filindeu, Paola first made the dough and had to knead it and stretch it into the right texture. She did many test pulls and it kept feeling the dough until perfect. The strategy take 8 pulls on the dough to create 256 threads, of the smallest noodles you can imagine - almost the thickness of your hair.
After stretching out the noodles, they are laid out and dried and cut into bite sized pieces. The noodles are then cooked the traditional way with mutton broth and a special sheep cheese from Sardinia.
It was truly something unique and special, and being able to meet Paola was a true honor!

She’s been doing it for 50 years and she still has so much joy and pride in her craft. Amazing people.
So greatful to Mark for showing every side and shade of Italian cuisine. Whenever I ask my friends what they think of Italian food they only know about pizza and pasta (only the most famous pastas probably like carbonara) not knowing that basically every single town has its own cuisine. Loving this series starting from Milano regional dishes which often get ignored till the beautiful and diverse Sardegna. Amazing work!
I am sorry your friends are ignorant
Thank you very much, appreciate it. And this is definitely just scratching the surface of the regional dishes of Italy. So much more!
The first time I see a foreign vlogger showing the inner sides of regional italian cuisine culture, so happy to see you appreciate sardinian genuine dishes. I love it thanks a lot❤
Mmmmmmm have an affair mark have an affair
Mmmm have affair mark😅
Not sure how long this tradition will last, so thank you for documenting it Mark!
FOR ME, MARK’S THE ONLY BLOGGER WHO REALLY GIVES THE REAL VALUE FOR EVERY SINGLE FOOD HE ATE. NOT ONLY THE TASTE, THE CONDIMENTS, THE PREPARATION BUT THE INTRISEC VALUE OF EVERY DISH. THANKS MARK!!!!!
Thank you, appreciate your support!
WHY YOU SCREAM?
These are some of the most enjoyable videos Mark has produced so far. Best food travel channel for me.
Thank you, appreciate your incredible support.
I feel like Sardinia is always really under presented in the foodie-world...so thanks Mark for reaching out and show us this absolutely lovely Woman, who is a real food-artist!!❤
Thank you very much, yes agreed. I wish I would have had more time in Sardinia to explore more!
When Mark said: "I'm still trying to comprehend that." I started tearing up. Such a humble man, such a great person. I wish I could live his life.
A machine is a cold hard piece of equipment. An engineer is the creator of the cold hard machine. This woman has a soul in which she gives to her pasta. No machine could ever replicate that.
I agree with Jeffrey that lady is making art not just pasta. That segment reminded me of my mom who would make her own pasta and she would have the pasta laying all over the kitchen drying. It would be on the table, chairs, cabinets, there wasn't a spot anywhere in that kitchen that didn't have pasta laying all over it.🍝😆
I am a proud 43 years old Sardinian and Mark, I am so impressed you got to find this gem and film it in such a beautiful and dedicated way, as you always do.
Our land is a misterious and ancestral land, essential and poetic, and you managed to capture it and sync to it.
Your work is oustanding, I have followed most of your videos and learned from your tips even if I am Italian.
I will go to Cibreo after seeing your video even if my partner is from Florence.
I will go and try the Filindeu even if I'm Sardinian.
I have known Roscioli in Rome thanks to you, even if I go there 3-4 times a year.
That's what you do, you teach even to italian foodies, like me.
Chapeau
This may be considered a gem in Sardinia but this is so normal in China. Any street noodle shop in China makes this everyday as a cheap eat. After all Marco Polo learned how to make pasta from China. In China I see them making pulled noodle like this in few seconds. No drama.
Mark Wiens has been to china himself, but he appreciated this art and so can you. peace@@blardymunggas6884
And get food poisoned. No thanks@@blardymunggas6884
Nonna' s smile is just great!
She is indeed very talented and she knows it! Bravissimo!
You’re a fantastic guy Mark, always highly respectful of good and culture. I’ve been watching you for years and each video is just as amazing as the others. Love Paola she is definitely a special lady 🥰
He is the man and very respectful.
Thank you very much, always appreciate your watching!

It's so good to see Sardinian food front and centre for once. That pasta was a work of art. God bless that lovely lady who made it.
Most beautiful Italian recipes that I as an Italian American, never knew about from Sardinia, 🇮🇹
It actually brought tears to my eyes.
THANKS ,Mary Jane Coppola

The thing that makes Italian cuisine great is its simplicity. A wonderful episode, Mark.
Mark! You have expanded my knowledge of speciality foods of Sardinia!!!
The way this pasta is made is just amazing. Her love and patience too.

Your videos literally make me feel out of this world sitting at home and getting that incredible food experience is next level! Thankyou so much for your hardwork and making your fans so happy! ❤
It all looked absolutely delicious! I love this series.
Your videos are very educational. In my travels in Italy, Sardinia, Corsica, Sicily, I have never heard of a pasta like this one. I have seen people in Italy and China make hand made noodles that are thin. But the noodles that the lady made, I've never seen that. Pasta of the Gods. Soup of the Gods. Dinner of the Gods. What you, Ying, and your friends ate, you cannot buy for love or money. I now will look into that Sardinian farm stead. I want to have the rarest pasta also!!! That woman is a national treasure!!!
What an amazing video and experience. Can't thank you enough for what you do and can't wait to see what you do next, keep it up!
Yet another wonderful Vlog! Thanks Mark for exploring Italian cuisine❤

Wow! Food from heaven. Thanks for sharing Mark.❤
Such a super talented lady👌🏿👌🏿 …her talent is unmatched in pasta making!!
When I was in china, literally anyone on the street can make this pulled noodle without any drama. Lol. I guess Marco Polo did learn how to make pasta from China.
@@blardymunggas6884In Italy we eat pasta at least since the Etruscans time...
We didn't need Marco Polo to start eating it.
@@sarac.123 Stop lying. When the chinese discovered wheat and noodle, you guys were still living in caves naked. Read history my friend
The skill in the pasta making is amazing and the lamb chops looked off the planet delicious! Thank you for the video!

Your videos are truly amazing, Mark! ❤
I appreciate your ability to get such quality content w the chefs and their process
dragon's beard candy pulling technique applied to pasta. its not about just pulling fast rather slow is smooth, and smooth is fast.
Mark has a truly unique ability to describe the taste of food in a way that makes it sound like it doesn't taste good, like how he described the su filendeo dish here.
The most happiest and content person on planet earth...loved to see all your exploration of food and culture around the globe..
wow mark!! this was trully amazin, it gives me more to look forward to when visiting Italy.
Thank you Mark, Jeffrey, Mr. Taster, Eduardo, and Paola who makes this wonderfully thin pasta and the chef and his staff that cooked that meal for all of you for taking us on this journey on history of making that fabulous pasta. She did a fantastic job. The lamb stew delicious. Love the bread. Greatest italian olive oil so green. True once in a lifetime experience!!! My favorite country ITALY.
❤Thank you!
Thank you Mark every yours italian video is not a show, but a treasure of culture and history.
The pasta is the bread and with the wine at the end represent the eucharist (taking communion) and that’s why people make the pilgrimage to be there and eat this dish. Love the symbolism in their food! 25:54
❤
You really are a good person Mark and wow what a special lady. The food looks absolutely amazing.

Italy has so much more to offer than only Rome.
👍
All of Italy is a veritable food powerhouse, every region has its mindblowing dishes, so much so it's just impossible to know what dish is the best.
Thank you Mark for this tour of Italy and for showing us its authenticity. Everywhere you went, Milan, Napoli, the food looked rich and healthy at he same time. The Sardinia part was a must watch. I like your friends as well with whom you seem to get along so well! You and your family are so precious. ❤
I would literally pay good money for this experience!! I absolutely love cheese stews and tender meats with veggies especially on a cold chilly day. That crisscross pasta is one of a kind and the local authentic fresh cheese compliments each other perfectly. The tender mutton with garden herbs & veggies is mouthwatering worthy as well. OMGOODNESS!! What a masterpiece collectives of finest culinary treasures. Thanks Mark for all your consistency and fabulous work!! Chao to you and family and friends may many blessings continue to come ya'll way!! Salud & safe travels!! 🧀🍖🥖🍲🍷🍇

Simply amazing. Love these videos from Italy. I believe it’s the best cuisine in the world. If I had only had one last chance to travel it would be to Italy.
Italian food is indeed considered to be one of the top three cuisines of the world, along with Indian and I can’t remember which, but it isn’t French, although some think so. I believe it’s Chinese.
Absolutely fantastic!
Your Sardinia & it's great cuisine!
That looks pretty awesome and looks so authentic!
