Today Ms. Dalal is going to be making maqluba, a famous Syrian celebration food that everyone enjoys! We’ve been invited over to her house, and she’s going to cook us her special recipe. It includes eggplant, in this case veal, rice, some light spices, butter, and an assortment of nuts.
When you eat maqluba in Syria you get a real taste of authentic home cooking. And with refreshing yogurt and cucumbers that made it even better. This was another amazing meal in Damascus, Syria!

grew up in a four flat next to an old lady from syria and her son. she grew her own eggplants out in the yard, and fed me syrian tea and fried eggplant quite frequently. man this is a walk down memory lane for me. thanks as ever Mark!

Ms. Dalal is a cool lady of the house. It wouldn't have ever come to my mind a combo of eggplant and beef. There's nothing better than getting invited to a local house and tasting homemade delicacies.
In syria , we cook maqluba with red meat or chicken . I prefer the chicken version

@@Eman_jordan Yes I said "a kind of". I was thinking about the concept of a meat and rice dish which exists across the Islamic world rather than the specific flavours of each one. Apart from Spain with its own Islamic past you will not find this concept in the West. I agree though that Biriani does have a unique flavour and is the king of meat and rice dishes.

Syrian food is one of the most delicious in the region and highly rated in the world.
HOW TRUE!...that Mark is not a fan of sweet tasting things @17:50 he takes a small bite of a dessert that is already small LOL! When I have seen Mark over several vlogs put almost a melon size spicy food all at once into his mouth, no small bites on that because he is a lover of all things spicy. I am that way too. If that food is not spicy, don't put it in front of me LOL! Another fantastic! sit down with fellow food lovers to enjoy time and good food together. Thank you! Thank you for showing the making of the maqluba! I knew what the ingredients were but it's easier to cook something yourself if you can watch someone who really knows what they're doing do it first. I hope Dalal's neck gets better, was a bit worried about the strain she was putting on it when she flipped that heavy pot. Damascus is such a beautiful city, I hope you filmed more there. You could follow one of the many cats with your camera and see where it leads you.

That looks delicious. I love eggplants. It is also nice to see a woman who is respected and treasured, unlike in Afghanistan, where women are being erased from public life and are not allowed to be videotaped (except for nomadic people living in caves. Apparently, those nomadic women are allowed to be recorded on You Tube.

Maqlubeh and kunafa are SYRIAN dishes even by admittance of top historians. You think now that Syria is going through its roughest period that you can take all of our thousands years of history and culture up for grabs like you won’t get any reaction from it.. fshrt.. oh and the entire levant and what you call “Palestine” is originally named Syria and belongs to Syria. Syria and Palestine are the same, I am Palestinian and Syrian but the food in Syria is the best in the Levant. It's not about the dishes, the reason why the knafeh and maqluba is better in Syria is because the ingredients are from Syria, where Palestine and Lebanon import many foods from Europe.

Great content Mark, I love the Syria series, and enjoying every bit of it.
I was hoping the guide would have provided some historical context to the Maklouba, it is not originally Syrian, although widely cooked in all regions of Syria in various ways. All stories trace maklouba to Palestine and was brought to all neighboring countries back then at the time of Salah Eldein.
I have seen a similar dish in Iran and not sure if it has older documentation in the Persian history.

Strange they’ve used beef. Only lamb I’m afraid would do for me. In Iraq we also add fried onions fried potatoes and fried peppers besides eggplant to our maqlooba. We make tomato rice instead of plain white rice. But this also looked delicious. Bon appetite wherever you are Mark. If ever you’re in London I’ll invite you Mark to try my maqlooba.
It's not strange, my mom makes it with veal (not just beef, it's specifically veal cubes), and she does it with lamb too. My mom doesn't use white rice though, she uses basmati or egyptian I think, and the spices she adds gives it a yellow colour. She also adds diced carrots and puts shareya rice. It's no different than when she makes mansaf with lamb or chicken, she does both and she is Jordanian. Even the artichoke hearts Mark eats in this video, my mom doesn't put vegetables but rather meat, onions, spices, and pine nuts. It is a variation and we all have our own. One thing I love about watching Iraqi food is that you have similar cuisine but do things very differently. Lebanese people are always trying out new flavour combinations with our foods, Syrians are very traditional and have the best food ingredients in the world, Palestinians have their style, but what I like about Iraqi style is that it is familiar and very different at the same time!
@@CsalbertCs you’re right. It differs from country to country. I dare say it varies from house to house. I just found it strange to use beef because they have beautiful lamb in Syria similar to ours in Iraq. I even found the lamb delicious in Amman and Beirut
