    Angela you've captured something really special here, it's so hard to put into words sometimes how magical Japan can be, beyond the trains and technology, the hustle and bustle, lies a people obsessed with being the best they can be. Really great video.

    Wow! I have watched so many of yours videos, but this one is my favorite without any doubt. This really left me speechless.
    The harmony between the song, the filming, and your narration is really awesome. Paradoxically, I do not think that one came in this place to fill his stomach, this is much deeper. This is first and foremost a theater show: nobody talks during the scene, the sushi is embraced by a seducing darkness and any gesture of the chief is a piece of art that has taken decades to master.
    I love the way you manage to faithfully recreate this atmosphere in your video. I mean, if it’s what you can do with just sushi… Keep it up!

    Wow what a great video, I love the little detail you pointet out how concentrated the sushi chefs are, even he placed the sushi he still looks at it and focus on what he's doing, awesome.

    Yo, great video. The angles you got of the food was fantastic. My favorite dish visually was the Horse Mackerel. I also loved the footage you captured of the Chef making the Sardine Roll.

    Angela... you're keeping me from visiting Japan every video you post my list gets longer and longer... :-X Just kidding.. it's my fault for not making up my mind on what i can skip ....
    Great work! Really good impression on the Sushi and on the Chefs.. you're right that was certainly determination to produce the best sushi he can, showing in his eyes.
    I am a little sad that i have less and less time atm so i can't really watch too much YT. Well what can i do against the public transport turning my route into mayhem... 4-5h a day on 6 busses is .. well a little hard..

    A friend of mine says the hardest reservation is Sushi Saito. Six months in advance reservation and he (Chef Saito) only accept customers who are regulars and know the chef personally. Crazy!

    The small bits of garnish? at the corner of the plate, was that ginger or wasabi ? To just eat and enjoy the music, sounds like my kind of place. Nothing is more irritating than having to hear someone argue on their phone, or have a couple argue because he was being inattentive. Or the prices you showed, how many pieces do you get ? Fr $90 I better be full😆😄😄

    I've been to the majority of Michelin sushi restaurants in Tokyo, and all of them age their fish...In fact, the top fish dealers age their fish for a few days before selling it to the chefs, after which they will age for more (most common in lean tuna). Aging is common, I don't know why he claims that he is the only chef to be serving aged fish sushi.

    Kimura san is not the only chef in Tokyo to age fish, almost all sushi chefs would age fish to bring out it's max flavors. But Kimura san takes aging to the extreme and that's what made him popular.
