Hi Roland. Can I know about the additional step taken to parboil them fish? Wouldn’t all nutrients and taste be lost here? And u are going to boil it with bean sprouts too. Why not just wash away the cornflour only? Fish are sliced so thinly so would like to know why. Thanks.

Think you listed "other ingredients" which was meant for another recipe. Was waiting for the lemongrass and dried shrimps but of course not in a sam loh hor fan dish.
Bean sprouts are meant to be slightly crunchy proving a contrasting texture to the soft flat rice noodles, they take no more than a minute to be cooked, I think you have well over cooked the sprouts. Also, I don’t quite understand why you discarded the water you cooked the fish in which is the natural fish broth, but instead add the artificial seasoning.
Hi Helen. You won’t get much sweetness from fish cos it’s the bones that will make the broth sweet. If you noticed, Roland added ginger slices to the water that was used to blanch the fish. It’s to remove any fishy taste from the fish. You can cook bean sprouts according to your own personal preference. We like ours slightly cooked because the raw taste of bean sprouts turns us off and we didn’t want it to spoil our dish. Hope this explains.
