For steamed fish, the brand of soy sauce matters. This is what separates restaurant and home cooked steamed fish. I haven't been able to find restaurant-style soy sauce anywhere.
The garlic and ginger combo is so classic. Every Chinese home will have this as the common steamed fish dish

Most welcome, yea elevating the bottom of the finish allows the bottom part to cook in equal time as the top, the entire fish is cooked perfectly :)
