Spice N' Pans I’ll normally vacuum pack and freeze in smaller portions. I’ll transfer 1 small pack to airtight container and put in chiller section. Any time when I want I’ll just take from the container. Never reheat the dried shallots.

Good idea. Pack them in the fridge for later use. Do you bake or air fry them before eating after you’ve taken them out from the chiller?
