How to Make Wat Tan Hor Fun 滑蛋河粉 | Mr. Hong Kitchen

材料:(wpy )
粿条 1人份
菜心 1棵 (切段)
鲜冬菇 3朵 (斜刀切片)
鱼饼 适量
虾仁 4只
☞ 虾背开一刀,清洗干净,用厨房纸巾抹干,加入少许盐,胡椒粉,
绍兴酒和淀粉,混合均匀,备用。
高汤 适量
蒜米 1瓣
蛋 1粒 (稍微弄散)
调味料: 生抽少 1茶匙,盐,糖,蚝油1/3茶匙,胡椒粉
1. 烧热锅,用油滑锅,加入粿条,大火翻炒均匀,两面稍微煎一煎香,
加入生抽,翻炒均匀,起锅,备用。
2. 煮滚适量水,加入鲜冬菇,鱼饼,虾仁焯水,最后也加入菜心,焯水片刻,
捞起,备用。
3. 起锅烧油,爆香蒜米,加入高汤,蚝油,盐,糖和胡椒粉,大火煮滚,
加入(2)煮滚,关小火,勾芡,加入蛋,关火,淋入少许香油和绍兴酒,
即可起锅,淋在粿条上,即可。

這個滑蛋太稀了,阿鴻可以試試稠一點,蛋液下時不是一點的倒下去,試劃個三字,待一會,再拉開,就會有拉絲的效果了。滑蛋的要求應該汁液能掛在河粉上為佳。

可以材料直接炒一下然后放高汤吗。感觉材料过烧水过后再放高汤材料会过熟然后材料味道也变淡了。
