Ingredients:
Basmati rice - 2 cups
Paneer - 250 gms
Peas - 1/4 cup
Bay leaf - 2
Star anise - 1
Cardamom - 2
Cloves - 2
Cumin seeds - 1 tsp
Cashew nuts - 10
Onions - 2 sliced
Green chilli - 5
Ginger garlic paste 2 tsps
Garam masala 1 tsp
Coriander leaves
Oil - 2 tsps
Ghee
Salt
Method:
1. Rinse and soak the rice for 30 mins
2. Shallow fry the paneer cubes with some salt and keep them aside
3. In a cooker, add ghee, oil and let it heat up
4. Add the whole spices and cashew nuts and roast them
5. Add onions, green chillies and saute them
6. Add salt, ginger garlic paste and saute along
7. Add garam masala and mix well
8. Add the roasted paneer cubes
9. Add water (1:2 ratio, 1 part rice : 2 parts water)
10. Add peas and mix well and bring it to a boil
11. Add the soaked rice
12. Cook it for about 2 whistles
13. Let the pressure release (rest for about 10-15 mins), garnish the pulao with coriander leaves
14. Serve the Paneer Peas Pulao hot with some raita by the side.
