Yes! The extra virginity depends on 1) Acidity and 2) Taste Test. If it's not the "first press" of a fresh fruit, the acidity will not be low and the oil cannot be classified as "Extra Virgin". Papa Vince is proud to actually use Early Harvest Olives, so those olives are really green, but that means we get more polyphenols!

I don't think the coughing means a thing. I use the Bertolli Extra Virgin Olive Oil, and after taking a sip of it, I was coughing a lot because of the pepper sensation. And I keep hearing how fake Bertolli Extra Virgin Olive Oil is. Someone is lying, or everyone is lying.

The answer is Yes & No. Yes because if the temperature is raised above room temperature during pressing, the yield will be greater but the quality will be less. No because with new technologies there is no need to press/squeeze the fruit of the olive more than once - Vitina

Italy and Spain lost their credibility in all Europe when it comes to olive oil. Even today, you can see big supermarket chains advertising fake italian and spanish evoo as such and charge double. When outside Greece, I only buy Greek olive oil with the PDO label on it. I have YET to see PDO evoo on any supermarket in the EU countries I've been to. In fact, high quality Greek olive oil rarely travels farther from the Balkans due to limited availability and high local consumption.

Unless you live in Italy and have access to a local olive oil producer, the Italian just the Spanish and Greek olive oil that are exported to here in the U.S are cut with cheaper oil, a mixture of difderent sources of olive, I recommend Californian olive oil or the Tunisian yellow black horse, if you think I am making this up, google all the scandals related to olive oil scams in European countries specifically Italy, I love italian products but unfortunately the mafia is controlling most what it's exported to us, mille Grazie.

I think another way to tell if Olive oil is real either has to have a harvest state or lot number
Sicily, not known for the best oil. Prefer Tuscany or Umbria, northern Lazio isn't bad either.
