Seems like many are compulsive and just operant condition themselves with high stress.@@RyanDeanDexton They also happen to have good taste, but the dark twisted affinity for kitchen work runs pretty deep in some and for others it's just an environment to channel their energy and avoid jail. Probably a fine line between them and you can't be good as without having love for at least a small fraction of the job like produce or cooking techniques and at least a few acquaintances, I don't think the kitchen nightmare is survivable long term. Probably better for the masochists than therapy until they actually need therapy.
What made you go back Into kitchens? I'm in a similar boat, last 5 years in kitchens. Fell in love with coffee and had a few months as a barista. Unfortunately the business was a startup and failed so I've had to go back into kitchens. As always, love the videos and have a good one 😊

Which of the following ways would win us points for delivering it correctly: 1. plastic bag, 2. polycarbonate food pan lined with paper towel (or no liner?), 3. SS food pan lined with paper towel (or no liner?), or 4. other?
My god I miss being prep, especially morning prep. No one fucks with you, you get to taste everything, no orders, no detailing everything after having your ass kicked, just knocking out batches and prepping sauces and seasonings then bye-bye. Good times.
So I'm gonna try and explain this to the best of my knowledge. There is michelin recommended, bib and then the stars. Recommended just means they use quality ingredients to execute a good meal but the meal wasn't at the level to be awarded a star if that makes sense.
Yes! Recommend is basically just a decent meal you can rely on a good time. Bib Gourmand is great food for a reasonable price, (it's been said that these are often critics favourites), and stars are the most prestigious awards you can receive. One star is worth a stop, two stars is worth going out of your way for, and three stars is an absolute must try.
