It’s ironic that this is so meditative to watch while knowing that restaurant kitchens are such a high stress environment.
prep cooks usually arrive well before service to prepare everything for the day, and while there is overlap between theirs and the other cooks shifts, they don't usually participate in actual service, which is the high stress part.
School didn't prep us for high stress........... I think
Prepping can be very calming

Love the music, the camera angles, and always interested to see restaurants making things like bread from scratch. Also as someone who regularly tries new Asian recipes, it's always interesting thinking "what will those maitake mushrooms be used for at a fancy restaurant like this? or the banana leaf rolls?"

It’s really nice to see such a tiny kitchen work so well together. My last job was about the same size but with less counter space, and everyone was each other’s way, huffing and puffing, always frustrated and angry.
It can be really tough to find a positive environment, this place is definitely an exception!

Wow...I only just realized...because these videos are so immersive...how many cameras do you have going? Do your coworkers mind that you're filming as you prep? Does your head chef mind that you're basically making money off them by working two jobs at once? How much does filming interfere with your prep? How long does it take you to edit all of this? These videos are amazing, but man, it must take forever.
I try my best to be organized so I don’t prep too slowly, that’s why sometimes I don’t show the whole day or every task. Editing the videos takes maybe 5 hours if I am focused. It’s getting easier the more I do it!

Just wondering how long has the commercial induction cooking equipment been around seems like gas has been gone for a few years in Canada
Many kitchens still use gas, probably most. Induction makes zoning the space for restaurants easier!
