    Im gonna feel like an idiot saying this but I was a bartender for 10 years and always kept my tools in a shaker tin in the well, literally never thought to transfer that to the kitchen i am shaking my head at my own self lol.     Deep cleaning your pantry and cabinets regularly is a good idea bc it also reminds you exactly what you have in your kitchen and where. Dude so smart

    Love this kind of content, man! A video on reducing food waste would be phenomenal. Especially tips on how to preserve foods and use food scraps that normally end up in the bin in creative ways. Keep up the good work!

    When in doubt leave a comment! Love the idea of deep cleaning one single thing every week! I'm at the point where I need to deep clean my entire kitchen, which will no doubt take hours of time. Love your videos, this is super helpful.
    I actually have purchased squeeze bottles for my oils but man that is a great idea to have them in a little squeeze bottle coozie like that.

    Thank you! I’ve been watching you for quite a while now, and you’ve taught me a lot of things I needed. Tools to make my life easier, skills to make my knowledge grow. This video I needed most. My organization isn’t great. I have a mental disorder that makes me have a hard time with multiple tasks. But you lay things out much easier for me and my spouse appreciates it too. Thanks Papi, for making things easier for me as a home cook getting to learn the best tips from an experienced chef.

    I do pretty much everything you do. My family thinks I’m nuts and OCD about my kitchen. But cooking and baking in a dirty and haphazard way can lead to food poisoning. Plus having an orderly kitchen allows me to enjoy making food for my family, friends, and me. Great videos and recipes!

    I love this type of video. I'm about to move and found some helpful tips for setting up my new kitchen. I would love more videos like this. Also, how to chop food. I know this is really basic, but I'm just learning to cook and don't even know the difference between chop, dice, mince, etc. I also waste so much food. I would be interested in any videos that you put together! I know they would all be helpful while I'm learning. Thanks!!

    I love these videos! It’s interesting to see how the pros do it. I usually manage to keep my counter clean enough but it’s the gas hob at the end I struggle with, with the grates on it and any oil spatter

      Some spices I keep in the freezer with my nuts and seeds! Others I keep next to my large bottles of oil and I just periodically refill

    Its been a few years since ive came back to this channel but I have always loved this channel and content and as an amateur home cook have loved to learn from your recipes and techniques. I came back to re watch your duck alla orange recipe w the dauphinois.. sad to see many videos I watched years ago are now gone. Esp w the mustard apple vinaigrette condiment ! Don't know what's happening but just wanted to say Ur an inspiration in my home kitchen - hope to see more uploads man

      For others - here's from memory:
      U want to cross section the duck fat side with your knife gently enough to not pierce the meat but only fat. Start on a cold pan and gently render the fat (skin side first)- begin basing the duck w its own fat to cook to medium rare.
      Once duck is cooked remove and reduce heat. Brunoise shallots and garlic, add beef stock (preferably a reduction such as a demi glas beef) - reduce. Deglase the fond w stock (rub the brown bits) and add the orange rind (like shave it I forgot what it's called) and fresh orange juice and cubes of glorious butter - reduce to a nice consistency.
      Prepare condiments: finely slice apples + white onions + mustard seeds + chives + white wine vinegar + sugar (to balance acidity) + salt pepper to taste + lemon
      Make a dauphinoise - THIS IS THE PART IDK AND CAME BACK BUT O WELLLLL AHHHHHHH so to be continued :'(
      Place duck on plate + dauphinoise next to + add condiments on top of daupginoise (cut into rectangle to make presentable) + bonus points if u have floral shit to put to make it look pretty (aka I DONT HAVE ACCESS TO THAT AS A HOME COOK SADGE)
      pour reduced sauce on plate - garnish w the orange peel thingy but shaved
      Trust me this shit is fucken banger - my fam loved it even given my shitty cooking skills hehh

      Ooo also I just remembered use the duck fat in the dauphinois instead of olive oil cos it makes it taste like HEAVEEEEEEN - these are all the tips I learnt from the PAPI BUT WHERES THE VIDEO AHHHHHHHHHHHHH

    Would love to see he video on minimising food waste. I always struggle when trying out recipes outside of my comfort zone.I buy things that I'll know how to use for a specific meal but then I keep it in my fridge and don't know what else to do with it.

    Awesome video, there's definitely some great tips in here. You should definitely make more videos like this! I just started watching your shorts and they are great :)
    You should have a whole organization series "Like a Chef" where you talk about kitchen organization and other things for home cooking.
    As a cook myself it gives me ideas to organize myself at work and at home. Great content 😊👍

    About a year ago you did a video with some kitchen equipment…I’d love to see a video where you show all the ways you use a vacuum sealer or use a Sous Vide circulator, etc… You mentioned some relatively untraditional ideas (fermenting under vacuum, creating a foams, etc…) and I’d love to have some ideas for how else to use the equipment I own.

    I would also appreciate a video about knowing if I'm buying a quality product. I don't need top-of-the-line stuff but it would be great to see that I bought a good knife when I spent nearly $100.00. I tend to buy the cheap stuff but would like to upgrade to a bit higher quality but I have no idea how to know if what I'm buying is better. Thanks!!

    Can I ask you what counter material, brand, etc you're using? It looks a lot like the kind I want to use when I build my own kitchen. Also, whoa! Can you tell me about that large Pyrex measuring cup at 4:06? Never seen one like that before. Looks like 1L-2L?
    EDIT: Nevermind I just started watching your bone marrow short, and realized it is plastic and not glass. But I was able to research and fine that shape/style of 1L & 2L borosilicate glass beakers on Amazon. And not crazy expensive, either! This will be super useful for when I want to put large batches of hot things into pyrex and want to be able to use the Bamix or maybe strain then. It'll beat using metal mixing bowls.

    Home cook for 4 people now down to just 2. But do dinner parties for 6 to 8. Struggle with quantities. Either too much or short. Most of your demos are single servings. Advice please. Your content is absolutely useful for a home cook. Thank you

    Hey Brandon, do you ever keep water in your spoon bains? The chef de cuisine I worked with always kept his tasting spoons and other tools In water which he rinsed in between Uses, just curious if that changes a setup.
