Don't ask me about the weird bit with Germany and Italy, as I got no idea what happened there. This can be most easily observed in historical games where soviets pushed west through Poland before the end - Poland will be excluded from victors if russians control most of it, Poland will auto-liberate if russians do not, regardless of German occupation.
The difference is that in 1939 Poland was not democratic (it was ruled by authoritarian left, but remember we are talking about left from the early 20th century not what we today call left), relations with Czechoslovakia and Lithuania were hostile and the only "allies" Poland had were France and UK.

Of course, according to the story, after some pretty heated exchanges of words and possibly bullets the flag was switched to the Soviet banner.
The reason you lost Romania, Finland, Turkey and Yugoslavia is because Allied nations walked into their territories without military acess, and since they were occupied by the Axis and they capitulated, the occupied nations also were considered "defeated" because you didn't liberate them by yourself, so all the territory the Axis held was in the peace deal, including your allies (at least Romania stayed with you lol). I thought you knew that and I don't even play Hoi4 😅😅😅😅.
I have an idea for a video: playing as Italy in 1936, (Historical AI On) go monarchist and by the settings make Germany go Monarchist too with Hungary trying tò reform the Austria-Hungary (they are monarchist too). And make an Alliance with those two called "Renewed Triple Alliance" and then trought the focus trees of you and Germany try tò defeat the Allies and Soviets
Honestly, Democratic Poland is a very doable playthrough, and can actually be quite strong if you spend the time to take parts from both the left and right path.
I tried to do that in this save. However I think I should've taken some focusses that give factories at the beginning before doing the constitution. Just a couple of military factories more a year or two before the war would've made quite a difference in equipping my divisions. But there isn't really that much time to do "protect Czechoslovakia" before Germany demands the Sudetenland so doing a lot of industry focusses does not seem feasible.
So apperantly you didnt know, but if a country is completely occupied and the nation that is occuping them is defeated, these countries will be partioned in the peace deal aswell. If you play the soviets for exampe and manage to take the benelux or even france before they can be liberated by their allies, they can be taken in peace deals. Best example would be poland after killing germany as the soviets.

Czech Entente never capped because Germany couldn't defeat Czechs plus USA joined them and once Germany was defeated, I was able to take Czech entente terotories in the peace deal as well (I was occupying most of them in Europe because I reconqured these on my way to Berlin).
