  • Two words: Chocolate Pudding! This ultimate feel good recipe is so silky and delicious and all cooks on the stove top in 15 minutes. I top it with salted peanuts but you can add caramel, whipped cream or whatever you love. FULL RECIPE BELOW.

    RECIPE: CHOCOLATE PUDDING
    3 ¼ cups milk (800ml) divided
    3 egg yolks
    1/2 cup sugar (125 ml)
    3 tbsp cornstarch (45 ml)
    1 Tbsp. good quality cocoa powder
    1 tsp. vanilla extract (5ml)
    5 oz. bittersweet chocolate, chopped finely 150 gm
    1 Tbsp. butter (15 ml)
    1 cup 35 % cream (250 ml), whipped
    2 Tbsp. icing sugar (25 ml)
    ½ cup toasted salted peanuts (125 ml), optional
    chopped chocolate, optional
    Scald the 3 cups milk in a heavy bottom medium saucepan over medium low heat with sugar.
    Meanwhile, in a medium bowl, whisk together egg yolks, remaining ¼ cup milk cornstarch and cocoa. Add the hot milk mixture in a slow stream, whisking constantly and then pour back into pot.
    Cook the pudding gently over medium heat, stirring constantly with wooden spoon for 1-2 minutes or until mixture thickens and boils. Change to a whisk towards the end of stirring to ensure a smooth cream.
    Remove from heat. Whisk in the chopped chocolate, vanilla and butter. Stir well until chocolate is completely melted. Divide pudding among six ramekins or small bowls and chill for at least 3 hours.
    Whip 1 cup cream with icing sugar until soft peaks hold.
    Serve puddings topped with whipped cream and salted roasted peanuts.
    Makes 6 servings

      Oh I love the addition of espresso! I have many variations on this recipe but for the quarantine version, I wanted to keep it simple. Thanks for watching

    A gazillion Chocolate "Thank yousss" Christine as this is such an awesome idea. I am on it!! As a child, Chocolate pudding was my all time favorite & during this pandemic time I am now reminiscing about my (late) Mother, that she created all meals & goodies from scratch.     I soooo needed to stumble across this delightful recipe, and the tip for mixing the cornstarch with the other ingredients to temper. It always been a crap shoot if the outcome has tiny egg bits, and now I know I was doing it wrong. Thank you for the step by step instructions and your passion---I can feel it, too! I cannot wait to make this satisfying treat!!

    I made your recipe, and it works! I didn't have any chocolate chips on hand, but I added extra chocolate powder and it turned out well. I haven't had much success in the past making any type of pudding. It would usually turn out clumpy and weird. But yours acts like my favorite pudding from Trader Joe's. Thanks so much!!

    But seriously, folks, I have tried and tried and... it just does NOT turn out the way Mama or my late wife, Sissy, could do it for me. sigh I sure do miss her and her banana pudding At 69, and having eaten it a TON in the past, I KNOW it is a food I could never get too much of.
    Heck, I would GLADLY pay the postage to have some sent to me.✨🤗✨

    I also say yes and yummy! I definitely would add orange zest. I also would make a different version but instead of orange zest I'd add espresso powder. Wow - My mouth is watering just looking at this.

    Love your videos! I just found you! I’m starting a mediteranian lifestyle, I love to cook and your video popped up! I made your pita bread... It is Delicious!!! I wrapped each one in plastic and wrapped in aluminum foil and I placed them in a large freezer bag and they freeze perfectly! I pull one out when I want to make your amazing personal pizza! I made a mushroom, spinach pizza with mozzarella and feta cheese! With my homemade sauce. I am making this tomorrow!!! 😁 I am a nurse/ Covid-19 Surge Agent for CDC-Info.     I love the look of your chocolate pudding and I do love my chocolate and puddings too and is so hungry while watching you make your pudding. I made some corn yesterday and ate it with some chicken wings I had. I have some shrimp out in the refrigerator which I will cook today (Saturday 4 April, 2020) and see how that turns out. I have not made any desserts lately, but got some cookies while out shopping yesterday since it had been weeks since I was last at a store. My supply was getting short, especially my meats and some vegetables. If you eat all of that at one time you are a good one and I am loving the look of the finished products.

    Newbie Here - Love watching you cook. If I may, though, I do like my pudding a tad thicker, and definitely like the thick "film" on top (to eat last, of course), and, although peanuts (and PB), use to be one of my favorite foods, I'm allergic to it now.       That is a bummer. Fun fact, I had a chocolate allergy for most of my childhood and I would always get those white chocolate bunnies, which I didn't appreciate. See you soon.

    Yep, yep YEP! Definitely going to make this. Unfortunately, my husband is groaning (kind of) because all I want to do right now is cook and bake, he can't go to his gym and I can't share the things I'm making with family, neighbours and friends. As soon as we've finished the pineapple upside-down cake I made this past Saturday, we'll be having chocolate pudding.

      @@ChristineCushing Made it yesterday. Delicious, despite the fact that it 'looked' a little light as I was cooking it, so I went rogue and tossed in another, almost tablespoon, of cocoa. Perhaps I jumped the gun because after I added the chopped chocolate, it eventually darkened. No matter - it tastes great even with the extra cocoa. I also noticed in the video, you added only 2 egg yolks, yet the recipe calls for 3. I followed the recipe and added 3 and thought you may have been making a smaller portion in the video.

      Yes, it is unsweetened cocoa powder that just amp up that chocolate flavour. I hope you try it. It's delicious and super easy!

      Cindy Soo thank you ! It’s called Maldon flaky sea salt from England. It’s super flakey with a very light texture. Be well

    We’re making all our own food for our wedding!! I’d like this at my dessert table - how long can this stay chilled in the fridge? Will it effect the texture if it’s in there for 24-48 hours?

      It will be totally fine for 24-48 hours. You will just have that classic skin on top. You can pipe the whipped cream etc. just before serving and it will be great. Congratulations on your wedding.

      dannyU2g that’s an good question. Normally I would hit it with a caramel and toasted hazelnuts .

    Your recipe calls for 1 tablespoon of cocoa but that seems very little to use. Also, when you dump the corn starch and then the cocoa powder into the bowl with the milk, they look like equal amounts even though the corn starch is 3 tablespoons. Is there a mistake in the amounts? Thanks.

      It’s a good question. The recipe is correct as is, but for the purposes of video I had to shoot it twice and made half the recipe . That’s why you couldn’t tell it was more cornstarch. The cocoa is just to increase the chocolate factor in addition to the melted chocolate. I hope this helps and that you try and love it ! Thanks

    The UK and Australia have a different definition of pudding. What you made is called custard in both places.
