    Wow yes I know all about New York cheesecake that’s where I live. Your recipe makes for a delicious cheesecake so light and luscious. Genius.

    THank you for the recipe!... I am going to try this.. I learned to make German Cheese Cake. In germany while stationed there with my hubby!.. For ten years , that is how i made it. Germans make it differently and it is quite light and airy. To the point, they also eat it at room temperature. Not heavy at all. and it doesn't taste very sweet. Only when you add the toppings. As an american, I was used to add to the refrigerator and make it cold cheese cake and overnite. That is when we would have some solid texture, yet airy and light. Coming back stateside, I started using the cream cheese and it would never come out as in Germany. I would have to find a german store where their cheese was sold. The few times, I found it in Texas. it was because of the import , their product was so expensive. By the time you finished a german cheese cake, it would cost over 30 dollars. Now, I tend to wait maybe once a year to make it. My family have done different cream cheese recipes, and none have been satisfying to anyone. They all want the German Cake. I am going to try your recipe, and see if this one will be satisfying. I can't wait to do it this weekend. Thank you for sharing.

    Hola otra vez lol well I make a delicious, creamy and not too sweet cheesecake also. I use mascarpone cheese (8oz) and cream cheese (32oz) and add 12oz of blueberries or blackberries in the filling to cook inside the cheesecake. They give a sweet tart taste. Also, I stopped using aluminum to keep the water out of the pan. I put the springform pan inside a bigger pan inside a roasting pan. it works.

    Now, this cheesecake I will definitely like. I don’t like New York cheesecake bec it’s too dense, like you mentioned. Thank you for not making it too sweet. I’m a subscriber!

    All I know how to make, as far as cheesecake is concerned, is an instant cheesecake. Eventually, I'll try to make this. Really love how you go into detail and describe this process.. 'Love it!! :)

    You are phenomenal. I need to buy a spring form pan. And its water bath time. I watched this very carefully. And everything you have demonstrated was perfectly done and I also see the answers to the lightness a cheese cake I feel should have you should have fluff and air in a dessert of this nature.     Hello from Vancouver. I like your down to earth all Canadian authenticity. You are so unpretentious. I used to eat huge slices of heavy cheese cake, now can't stand it. Too rich and stogie. I think I would love this. I am going to try it.

      Cheesecakes use 4 whole packages of cream cheese ..Yikes ! Mine has half that’s so it much lighter in texture and richness. Hope you are doing well in Vancouver. .

    Can I use a hand mixer if I don't have one like yours? Cheesecake looks amazing but I don't bake enough to need a stand mixer in my small apartment.
