      The key for longer holds is to release a bit of air every 10-20 seconds, CO2 is what causes you to stop early not Oxygen deprivation.

    For the jaw mount:
    Don’t do the ant thing. Tried that several times when I was spearing in Guam. Only made a mess. Wrap the head in aluminum foil. Throw it on the grill after your done cooking, or in the oven at around 350F for about 45min. Using the Grill will keep the smell outside. Pull it out and set it aside till it’s cooled just enough to handle carefully with your dive gloves on. Take the aluminum foil off, Most of the flesh will melt off as you do this. You can typically just reach in and pull the jaws out, picking the rest of the flesh off by hand. use an old toothbrush and toothpicks for what little stuff remains. Once clean, Soak the jaws in hydrogen peroxide. the higher the percent on the bottle, the shorter the time. Leaving em soaking too long will erode them and make them brittle or cause them to delaminate. Just right gets a bleach white effect. Set them with crazy glue gel. Paint them with a clear or white water based acrylic to give em a protective finish.

      Have you tried boiling the head? I heard the grill or oven tends to cook the bones which is not what you want right? Mahalo

      Ben Schlesier haven’t had trouble overcooking the bones - but I suppose it’s possible, especially if the coals are still white hot. Tried boiling it with a friend on his catch with a gas camping stove and a big aluminum pot outside. We figured it wouldn’t smell nearly as bad that way. Was exactly the opposite for some reason (and left more flesh on the bone). His neighbors won’t ever let him live it down.

    You can make fish stock with the head and then be able to take the jaw bones at the same time when the meat falls off

    Boil it’s head for the jaw, pick the meat off and take the jaw apart keeping it in order as best as possible. Bleach overnight. Next day assemble it. I use layers of napkins and superglue. Good luck! Awesome catch brother. Love the channel!

      The napkins are to join the jaw where the joints usually are. Superglue and it’ll blend in with the bone color, you can’t even tell. Use the brush superglue. Hope this helps bro

    Amazes me the amount of stuff they do before they eat the fish, here in the caribbean we just clean fillet and package out the meat and thats that .Never used towels to dry or ever fine tuned cutting the blocks and it never affected the meat quality

    Try a drizzle of fresh lilikoi juice (through a little strainer) and black Hawaiian salt across your uku sashimi. It'll blow your mind and break da mouth.

    A good way to get the jaws out is to get it cut down to where it’s a little bit of meat left and the put it on an ant pile and let them eat of all the remaining meat

    I just wanted to let you know when using that Chinese Dry Mustard, you have to mix it with some water first. After mixing together it should be like a paste. Usually that is mixed with Soy Sause and eaten with different Chinese food.

      After it paste up sticky in the bowl, turn the bowl over on the countertop for approximately 3 minutes. Don’t worry if it’s the right stick consistency it won’t run. What this does it peppers it up hot, hotter. Aloha-

    Ryan, I found that a great way to fillet fish, is to use an electric carving knife. You wouldn't believe how easy & fast it makes the job.

    Use the bone carcass for soup! Fry em first to get full flavor from it! Very nice catch!

      Yes soup like the Filipino do. Boil up some water add: ginger; garlic; tomatoes; leaf onions, salt pepper to taste and let it boil till tomatoes soft add fish with some leafy Ong Choi (swamp cabbage) Call me up so I can taste. Eat with sticky rice. Hmmmmgood.
      If you feel adventurous add some Mama Sita tamarind powder (siningang). It makes the soup deliciously sour. My father’s recipe-
