A microplane also works great! I got one for years ago for citrus zest and ended up loving it for ginger, garlic, nutmeg, etc. Doesn’t seem to be such a knuckle-buster for me. 😁

You’re right, toasted sesame is really more of a finishing / flavoring oil as opposed to a cooking oil. Because it’s already been heated up it has a low smoke point and a delicate flavor that’s lost somewhat if re-heated. If you really want to cook with sesame oil, untoasted is the way to go and then finish with a tiny amount of toasted right before serving if you want to drive home the sesame flavor profile.

If you have a box grater with small micro holes on one side or a micro plane, grating the ginger and garlic penetrates this awesome sauce recipe better and there are no big chunks of garlic and ginger! A pestle and mortar was one of the best investments I ever made .. a few minutes bashing up garlic and ginger and you have a fresh paste, as coarse or as smooth as you prefer.
I just made this and served it over broccoli and napa cabbage with scallions. I used a microplane grater on the ginger because I didn't think I could chop it small enough. Next time I'm using less ginger, I think using the grater makes the ginger stand out too much. We skipped the sesame oil, and thought it was yummy without. Thanks for a great weeknight addition to our rotation.

Just make sure the ginger is not out of the freezer for too long a period, as it turns to mush-lol. Also wrap it well with paper towel and get the air out to avoid it becoming mushy. A garlic press would be easier as well-ensuring small mince with less effort. Looks amazing-can't wait to try! I find sauces are the key to taking this way of eating to spectacular!!! For the garlic and ginger you could use a microplane or the small side of your box grater. 3:45 actually, if you can, szechuan pepper corns are ideal for this sauce. Black pepper works but for an actual szechuan sauce you really want to use szechuan pepper corns. I'd also add some Mirin, chili paste, and five spice. :)

That looks amazing and what a great sauce, I love fresh green beans as a side dish because they are so much more flavorful and delightful than frozen or canned, it's just...WOW! This would be perfect as a side for your puffed tofu recipe as you mentioned, or my favorite way to make tofu which is a recipe called Black Pepper Tofu - it's so good, you should try it if you haven't already since you like spicy stuff!

I can’t wait to try these, Derek! I lived in China for 7 years, and Szechuan Beans were one of my favorite dishes. Of course they contained meat (it was my pre-vegan days 😳) & lots of oil so I’m sure these will be even better! ❤️
Oh Yum, I'm thinking to add this to Stir Fried Brussel Sprouts. Always looking for away to kick this veg up a notch. I usually do them as a stir fry with Olive Oil, garlic salt and pepper then finish with Balsamic vinegar.

For ginger, I find using a grater on the small side works better than chopping, and it omits most of those really tough stringy fibers.

Looks really Yummers! A trick for ginger is to keep it in the freezer and then grate it on the tiny part and it comes out like snow. Perfectly minced.
