Replacing Potatoes on a Keto Diet - Part One - The Taste Tests

  • Опубліковано 4 бер 2020
  • This is just the first part of a series (likely 6-8 videos) where I will be looking at various replacements for potatoes in a ketogenic diet. This first part is a series of taste tests that gave me an idea of what some of these vegetables would be good for and which ones I'm not even going to bother with. You're welcome to run with any of the ideas I've proposed in this video, or you can wait as I continue to experiment and release the rest of the videos in this series.
In this video, I test celeriac, diakon radish, kohlrabi, rutabega, turnip, jicama, and (to a lesser extent) zucchini. I try them raw, French fried in tallow, and dehydrated into chips. What I learned is going to put a lot of "potato" dishes back on the menu, starting with corned beef hash (which will be next video in this series).

My favorite potato substitute is using a rutabaga for mashed potatoes. Cut one up in very small pieces and boil in salted water until very fork-tender, mash with lots of good butter and half and half, add cracked black pepper, spoon into baking dish and run in hot oven until crusty on top. so delicious!!!! keto friendly.

Jicama has been my longtime favorite for making fries in my air fryer. I just drizzle down with a little avocado oil and sprinkle and some seasonings and toss them in a bowl. Then I air fry them. They turn out great! They are a little crunchy in the middle still so if that would bother somebody and you want them to be softer than you would probably just have to air fry them longer. I love them! Thanks for doing this video Steve. I can't wait to watch more!🤩

Shirley, you have piqued my interest. What temp setting do you use and how long do you fry them? I tried grating the jicama for hash browns, seasoned and tossed them in oil but all I got was burnt jicama. I tried lowering temp and cooking longer, I tried raising temp and cooking for a shorter period but ran out of jicama before I could get it edible.

I got the idea after the crunchy goodness of the dehydrated jicama chips that I might be able to make a tortilla chip out them. I soaked them overnight in a brine of water and OOOFlavors corn extract, along with a little taco seasoning then dehydrated them. The flavor was awful. Also, there's a huge amount of shrinkage when you dehydrate, such that a jicama only yields about 9-10 "chips". It may not be economical for me to continue that experiment.

What a great idea. So sad that it didn't pan out. If I had time, that would be my ultimate quest. I am a chips and salsa girl from way back and miss that so much (not enough to cheat) but a wistful longing for homemade tortilla chips. Thank you for your continuing efforts on this front. I am definitely coming back for the corn beef hash idea. I roasted radishes and diced them into cubes but it just didn't turn out right when I sauteed them into the corned beef. Very lack luster. I hope yours will be the breakthrough I'm looking for.

Is Yuca keto? If so, they're addictive to me. They call it Cuban fries. I make them often. They are long circular in shape. Cut them into 3" in length and peel off the skin. Put in pot with enough water to cover and boil till cooked, not mush. Drained and slice them in the shape of fries. Heat oil , like you're going to deep fry, gently put in the precooked Yuca for a minute or so. Do not let them turned into golden like french fries otherwise they're very hard. But just a touch/ little golden at the end or sides. Sprinkle some salt while they are hot otherwise salt will not stick. Enjoy.

I do see that the net Carb count for Jicama is still pretty high. 1 med is 58g total - 32g fiber and 12g sugars that's 26 net carbs. more than I do daily. so still have to watch the carb count on these.

Jicama has been a favorite snack since childhood. Just by itself, or with lemon. But as a fry I did not care for that little bit of sweetness. Turnip and radish get mushy in my experience when fying, but I don't mind them diced up, in an omelette. I have made Turnips au gratin several times. My family thought it was alright for not being potato during the holidays. I don't mind celeriac. But I think I have to cut off too much of the exterior (wasteful). So, for me, I've gone with rutabaga for fries. I have not tried kohlrabi. They are harder to find, and they tend to be small when I do see them. But I will need to try them now that you mentioned they were "buttery".

It is so disappointing to see everyone else really like stuff when I don't. I use regular small red radishes in soups and stews. Not so good fried or as “potato “ salad though. I did make them into mashed potatoes and they were pretty good. Jicama I use as an apple substitute for like apple pie, applesauce, fired apples, etc,. Not bad as fries though either.

And sometimes just plain old red radishes can fool everyone too! Last year I discovered Low Carb with Jennifer Banz and all of her recipes I have tried are awesome. The one I have made the most is her Keto Hamburger Stew which uses red radishes in place of potatoes. The first time I made it I was so skeptical and thought "this will never work" ... boy, was I proven wrong and blown away. Since then I have made the stew numerous times and every time it amazes me that I could fool most people that those are potatoes in that stew. Try it, you'll see!
