Try these fries and maybe you won't go back to potato fries again. These keto fries are made with healthy olive oil which beats those regular fries deep fried in vegetable oil. You also get the benefits of eating jicama with all the fiber it contains. You can eat jicama raw or cook it.
Jicama Fries Recipe
Ingredients:
1 medium jicama
1 Tbsp. olive oil
Salt
Garlic powder
Smoked paprika
Directions:
Preheat oven to 425 degrees F.
Peel the jicama with either a potato peeler or a knife. Cut it in half and then cut ¼ inch thick slices. From there cut the jicama into french fry size sticks and place in a pot. Cover with water and a lid and bring to a boil.
Once boiling you can remove the lid and continue boiling for 10- 12 minutes. Drain into a colander and cool for a couple of minutes. Lay the fries out onto a clean towel or paper towels to absorb the excess liquid. Place paper towels on top to blot dry.
Put the fries in a bowl and add the olive oil. Mix to coat all the fries. Then season with salt, garlic powder, and smoked paprika. Toss and repeat the seasonings.
Place the fries on a parchment covered baking sheet in a single layer so they are not touching.
Bake at 425 degrees F. for 30 - 45 minutes depending on how brown and crispy you want these keto fries to be. You will turn the fries over about half way through the cooking.
Once the fries are as dark and crunchy as you like, they are done.

When I tried making jicama fries, I still found them too crisp. With potato fries, the inside is soft, but not with jicama fries.
Recently found out type 2, so this recipe is heaven scent, thank you.
I can no longer physically cut jicama so I rely Trader Joe's for their cut jicama sticks.

Certainly they could be deep fried?
inulin is the same stuff in Jerusalem artichokes also called fartichokes. Boiling helps remove the inulin from what i've read. And let me tell you, if you don't get rid of the inulin to some capacity...you will be farting like you've never farted before. Jerusalem artichokes are very good btw, nutty potatoe.

Don't overthink or overcomplicate Jicama.
Peel, cut in half, slice the halves into chip sizes, and crosscut into shoe string potato (French) fries.
Lay on plate, dribble olive oil, then sprinkle your favorite seasonings, and microwave for 5 minutes.
Jicama is the perfect thing to cook in a microwave.
Better than French fries.
I do low card and eat Jicama raw. You also don't need a knife to peel it since you can peel the skin off like a banana. The big ones are very fibrous so I buy the smallest one I can find. I eat this since I was young. It's very satisfying and very filling to eat. Enjoy.

How is this cutting carbs when one medium Jicama has more carbs than fries?

Hi Robin, did you ever try making mashed jicama? We make jicama fries all the time, as well as use it as potatoes in hash. But haven't tried mashing as it doesn't seem to get soft enough. But maybe we're not boiling long enough?
I haven’t tried making mashed jicama yet. It could be that it won’t get soft enough but the hash sounds good. 👍 I may give the mash a try sometime.
@@RockinRobinCooks I saw another video where they used an instant pot to cook the jicama, so tried it last night. They did get much softer. Perhaps letting them cook longer is the trick. Will try again.

I am making jicama fries tonight. I did cut up jicama the same way I would cut up a potato and I put it in my crock pot with beef and onion as a replacement for potato it actually turned out very good. It was a little undercooked but tasted very good

Actually, you can peel it without a knife. You can use your fingers. It has layer like onion. That way you won't lose a lot of the precious meat. Pinch a part of the top and pull it all the way down. If you find it difficult to use your fingers, you can use knife only at the start, then pull.

Why salt and garlic powder rather than garlic salt?
Hi Chris, I like to be able to control how much salt I add to a recipe and the garlic also. I really don't know what the proportions are when they are combined like that. Also I like to choose the kind of salt I use. I currently mostly use Real Salt because it is less refined and contains minerals. Great question!

air fryer hint, heat on a lower setting fir-example 15 minuters. the last 3-4 minutes bump the temperature 50° to crisp it and wa la.

What do they taste like before you put all those spices?
Jicama has a very mild flavor. Sort of like and apple but not nearly as sweet. Or sort of like a potato. That’s why there are plenty of spices in this.
