  • Just having a little fun experimenting with the bread recipe. The quantity was halved to make 6 rolls as many people may be making this for one or two people.

    Nutritional Information/Bagel:
    Cal: 137.4 | Net Carbs:0g | Fiber: 1.4g | Total Carbs: 1.4g | Fat: 10g | Protein: 10.1g
    Ingredients:
    128g/1/2 cup Peanut Butter (organic if you can)/ Nut or Seeds Butter
    4 Egg Whites or 154g Carton Egg Whites or 3 Large Whole Eggs
    8g/1 tsp Baking Powder
    8g/ 1 tsp Sweetener (Optional)
    1/4 tsp Salt (Optional)

    I can’t thank you enough for this peanut butter recipe. When my children and grandchildren come home to visit we struggle with mealtimes. Some of us are gluten free, dairy free, low carb so finding a bread we all can have is fantastic! Thank you!
    I think the cooking time is probably different due to the baker’s location. Altitude plays a big difference in the amount of baking time required.

      Oh have to make one bread instead of different options would be a game changer...I'm so happy this recipe would save you time and make things simpler.     I received my mold yesterday and made these buns today. LOVED them. They turned out so good. They have a hint of peanut butter taste, but the texture and softness of the bun are perfect. I also added 1TBS of psyllium husk and ground flax seed for fiber. I definitely will make these again. Thank you for sharing this recipe!

    Omg, Mel, you are freaking awesome! ☺️ I’ve made the original loaf recipe twice since you made the video. Following up on our precious message on that video, I used salted seasoning like DanO’s instead of plain salt and homemade bacon bits in my second loaf. Wow, so savory. The umami taste was 🔥!!

      @@CookwithMel1 I am hooked on these recipes. I have a CGM and noticed that this recipe (I use almond butter) doesn’t raise my glucose at all. I tend to limit the bread recipes with psyllium husk because my blood glucose goes up more and I get bloated. So thank you, once again! 🤗

    OMG! These are so simple and so tasty! This will be my go-to "bread" recipe. I also had one with my homemade strawberry jam. Delicious! And so fluffy! And the baking time was exactly 10 minutes, as shown, although I only got 4 buns out of the batter.

    I tried in the microwave... gamechanger! These were the best I have made. I found when I cooked in the oven in the silicone that the bottom would get a shiny hard texture I did not like. One took around 80 seconds... 4 took nearly 4 mins... but I did 90 seconds first and then 30 second blasts till cooked... I sprinkled caraway seeds on... they were great. Thank you Mel 😊

    I made again... am amazed this recipe works... I notice mine are not as big as yours but I am using chunky peanut butter. Am going to try to make with peanuts ground up next time as natural peanut butter is really expensive where I am. They are so filling as well... one small bun cut into 4 small slices makes 2 great little canape size sandwiches that make a great lunch. Now I have an alternative when I can't get any almond flour or low carb wraps from the store. Thanks so much for this great easy recipe.. 😍

      @@lifdohop I didn’t taste the PB at all! I was honestly so surprised. So far I’ve had salami and cheese, and chicken salad. Both Really great.

      @@jennincal okay thanks for the info...please try letting them cool with the foil on. You can brown the top later if you like. The flopping is a due to a sudden change in temperature. I've also just left other bread in the oven with the door slightly ajar. Hope that helps.
      Also, I whisk for about 3 minutes total, that's why I say I don't think that's the issue.

      @@CookwithMel1 My son lives in North Yorkshire. Pateley Bridge near Harrogate. It’s a gorgeous little touristy village slap bang in the Yorkshire Dales. Not quite as gorgeous where I live. My town is Wallsend, just east of Newcastle. It’s where they used to build ships on the Tyne, very industrial. All of that is gone now and the whole place is a bit lost and shabby but some very good salt of the Earth people live here. There are worse places I’m sure and it’s home for me lol. Where did Chris live?

      @Lyndsey Beaumont Chris lived in Knaresborough he says its 4 miles from Harrogate...beautiful little village. It had more pubs per head of population than anywhere else in the UK at that time lol. You should check out the Yorkshire Pudding video as he does part of the method in a Yorkshire accent haha. I would love to visit that part of the world someday ❤️

      You could try almond or macadamia butter for a plainer taste

    These made... With a few adjustments. I had mini muffin pan so I dropped a little in 12 small spaces. Then forgot to tent with the foil so I tented it on the cool down. AND yes my tuna salad went on top of it PERFECTLY!

    I’m a little confused by what you said about convection ovens. I think you said convection oven when you meant to say conventional oven. As far as I’m aware if your oven has a fan in it is a convection oven. You need to increase cooking time if your oven does not have a fan… or if you switch the fan off. Anyway, love the options you give in the recipe: egg whites/carton egg whites/full eggs. Great stuff! It’s also great to see Aussie available products! Never thought of using tahini instead of a nut butter. That’s a great idea. This should scale down to a mug and a microwave too.

      Hello Paul. To be honest I was a little confused too because one of the ladies told me this was the reason...so thank you I will have yo clear that up with her. Oh yes Aussie all the way...and mostly shop at Coles or Woolies or online if we can't find it in store. I think tahini is my favorite because it has the plainest taste...and its nice to have white bread sometimes. Thanks for the great comment ❤❤❤

    Hi, thank you for the bread recipes. I tried this and even using the jumbo muffin pan, these 6 turned out very small. Dobleyou think I could double the recipe and bake double the time?

    Hi Mel..love your recipes and ideas but I'm sensitive to nuts too..what other ingredient can I use to replace the peanut butter or any nut butter that would provide the same batter like structure and tye same results?
    Is vegan oilve oil butter possible? Or mashed potatoes?

    This is amazing! So simple and no cheese lol... This is the first I've seen made with peanut butter. Interesting. Does the finished product not taste like eating a glob of peanut butter? I love peanut butter but I don't want the peanut butter flavor to overpower my cheese burger lol... just curious everyone's experiences with this. If making a burger bun and having burgers, does this make it taste like peanut butter. I've tried so many 90 second breads and chaffles but always exploring new ways to do things. Thanks for this.

      It does taste like peanut butter bu the flavor is gentle. Please use macadamia or cashew butter instead. Even almond is okay but it also tastes almondy.

      UPDATE: I made these last night, cut the recipe in half just to test. I am so surprised they don't really taste like peanut butter at all for some reason LOL but the texture is so amazingly like real bread it's blowing my mind. I've made every type of keto bread from fathead dough to 90 second bread and this is my new favorite. I'm sold. And it was one of the easiest to make too.       Thanks so much. Yes you can. Please follow the instructions on the bottle to convert the powder to peanut butter. The proportions are correct.

      I don't think so...they behave quite differently. Our new experiments are with Clean keto flour. You should check it out

    Is this type of bread ok for people with gluten intolerance. I only found out recently that was what I have so I'm just looking for new things to eat at the moment. Anyway either way I'll have a go at making this bread tommorrow. Thanks for posting this video I never would have thought of somthing like this otherwise

      Hello. Just to share more info about gluten intolerance. Normal baking flour has gluten in it so do avoid regular bread and baked goods. This bread is flourless so it should suit you. It is gluten free 😊

    These are textured like real bread but the peanut butter smells strong. I was wondering if I can use chickpea and make it into butter as an alternative? also is it possible that I make it into a full loaf of bread, how long will the baking time be. Thanks for the recipe.

      Hello, you can use any nut or seed butter depending on your diet/allergies. This recipe is actually off the back of the bread recipe which took half an hour to bake 😊

    I tried to make these into small tortillas... was a bit rustic and chaotic....haha.... I wonder if a bit of xanthan might hold them together more... they taste more like an omlett/pancake tbh... so I might just revert back to the buns.... though I was thinking of trying to spread it out thin on a baking tray to get a kind of lavash bread.

    Do you count carbs? I am just wondering how many carbs are in a bun with all that peanut butter?

      Hello Judith. The carb count for my buns is listed in the description box. However you do not have to use peanut butter. Any nut butter or tahini will work well too, of course the carb count will depend on what you prefer to use.

      Hello add 1/2 tsp Baking Soda and 1 tsp of Vinegar or Lemon Juice instead of Baking Powder. I got the info from here but I haven't tried it:

    I just tried it. Not bad but it came out extra dry after 20 minutes. Chokingly dry. Gonna have to eat with butter and moist stuff like cheese or so. Also I think it would turn out into a lovely Jamaican keto bun since Easter is just around the corner and I've already started cheating with Ms Birdie Easter bun. So thanks for giving me an alternative. Gonna add cinnamon nutmeg and more keto sugar
    I also used almond butter instead of peanut butter. Could that have been the reason for the dryness?

      Hello Karen...thanks so much for the review. Actually it's not supposed to be dry at all...kind of soft and springy. It sounds overbaked to me so maybe your oven is faster than mine. I think you should lower the oven temperature by 20F and bake for 20 minutes.
      I think it baked and because it was hotter than the buns liked it ended up being like toast. I hope that makes sense with my silly analogy. It's going to be the same scenario with the Easter buns so please keep that in mind. I would love to know how it turns out with those adjustments.

      Hello, I would say it does taste like whichever nut butter is added. For a "bland" taste I use Tahini :)

    I am comparing recipe for egg white rolls and bread. Bread has 9egg whites and rolls have 4 egg whites. Is this correct. I thought the recipes were the same. Are they the same recipe or is one with 4 egg whites and the other 9 egg whites?

      The bread recipe was carefully halved to create the rolls. It's only when you make you will see the recipe is quite forgiving too.

      I can not eat a seed butter because I have blood B type that allergy to all kinds of seeds too. So only can use either cow's milk butter or coconut butter.

    Mine are in the oven. Not looking good. The batter was much thinner than Mel's and I only had enough to make 5 Muffins using 1/4 cup of batter each. My egg whites were from a carton and I measured about 2/3 of a cup. I have had the egg whites for a while but they still have 10 days before they expire.

      Some ladies found they had to bake for longer. I think it's something to do with different ovens. Mine is probably ancient.

      They actually came out pretty good. I made a second batch and whipped them about 4 minutes. The batter looked more like yours but still not as thick and only got 5. How long are you supposed to wish the batter?

    Don't they have a very very nutty flavor? I used some peanut butter mixed in with almond flour and even that tasted too nutty to me. Maybe it's just not for me.

      Have you tried using Tahini? Definitely no trace of a nutty taste there.
      I find it to have a nut flavor but not very nutty...using the peanut butter.

      @@skyeblue6834 well...considering how little ingredients you need to make it, think of all the ingredients you're replacing. For example no need to wait for a yeasted bread to rise for an hour or more. No kneading the dough, stuff like that. If you have baked regular or other keto breads before and you make this one you can tell the difference and benefits. I think that's why alot of people like it.

    Now that you can zoom in on the video I can see that you are actually using a tablespoon of baking powder and sweetener and half a teaspoon of salt ... so now I'm a bit confused how much peanut butter and egg whites you used for 6 buns because it looks like it is different to the voice over. I have made according to the written recipe but mine never came out the size of yours. I now bought the pan you used but I think the recipe units might be off to make 6 buns the size of yours. Love the recipe though.

      Hi SJ. Actually, I was making 12 in the footage. But I had a thought before I did the voice...that 12 would be too much for one person, and so I halved all the ingredients for the voice.
      So it's even more confusing to me why yours isn't turning out like mine. Do you use gram measurements?
