I made the tamales last Sunday. I make glass bowls with masa, chicken, cheese, jalapeno and masa on top. Wrap in foil and steam. I eat them for lunch at work and omg, this recipe is the bomb!! I warmed up my tamale bowl at 325 for like 45 mins and it was crispy and the hot sauce on top provided just enough heat! I could've ate an other bowl of it but I'll save it for tomorrow 😊 bravo! Love this recipe and I will be making it again

A little note. Mexican tamales are made in banana leaves and corn husks. The type of "wrapping" dependes on the region of the country. In some areas, corn husks are very popular while in others, the traditional tamales are only wrapped in banana leaves. This is one of the things about the variety of Mexican cuisine. I am going to try your recipe for the masa!! Thanks!
In Ecuador we wrap tamales in Achira leaves (a kind of large leaf Canna lily) and they are delicious. However, the BEST tamales I ever had were Mexican tamales wrapped in corn husks!

In central America like El Salvador from where my mom is from, they wrap tamales with banana leaves. I've had Mexican tamales that were wrapped in banana leaves as well so it really depends on what region in Mexico it was made. I've never had birria tamales. My mom makes some bomb birria and we eat it like that or make birria tacos or quesadillas. I will like to try out your keto masa looks delicious and I won't feel guilty that my blood sugar will spike after.

Yes, make them all by yourself. It isn't hard, it's repetitious. Cook the meat the day before. Don't make them tiny like in the store but fill those corn husks up leaving only a bit at the bottom to fold up (the small end is the fold up end). If you don't have a tall pot to stand them up, you can lay them flat on a steamer thing in the bottom of a big pot. Add water just to the steamer thing so you don't get water in the tamales. Check after half an hour and add more water if needed.
A restaurant near me makes the best birria. I could just buy a plate to my o and use it. Use the juice instead of water and may be ad a bit of powdered pork rinds to the masa

Mayra an we use butter instead of lard? My sons girlfriend is vegetarian and I thought I’d use jalapeños and jack cheese as the filling instead of meat. Bu the masa I’m worried about. How would we do an equivalent in measurement

@@EMVelez They are called pasteles and they are made with banana leaves and the filling is not corn masa but made with a mixture of yautia and verde plantain masa. The center is usually pork or pollo con garlic, olives, and other things added. I was simply saying that we wrap them in banana leaves.

Where do you get a good meat lard? The lard at the supermarket is basically nasty margarine. They call it shortening but it’s that messed up horrible vegetable oil that’s been hardened in some kind of lab process. Maybe they don’t do it the way they used to but it’s still just as bad if not worse, I’m sure.
I was saving the fats from my cooking, but chicken fat is not healthy. It’s omega six mostly because they are fed grains. And beef fat also is not great unless they are grass fed, which is very very expensive where I live. $15 a pound, even though I see other people posting that only pay seven dollars a pound. They take advantage of us here in New York City.
