    Today I’m going to be sharing with you how to make the BEST MASA FOR YOUR TAMALES, SO EVERY TIME you make them they come out perfect, now let me tell you the masa either makes or breaks the tamales,so you want to make sure its perfect, MOIST because nobody likes to chase a tamal with a drink yesss cafe and tamales or soda and tamales are the best combination but you dont have to take a sip every time after you take a bite of your tamal. The best way to know if you are going to have the best tamal is by making sure the masa floats, this lets you know the masa is light, airy and fluffy which means MOIST tamales! keep in mind, like every recipe and every household, are tons of variations that make this delicious recipe, you can constantly adjust it to your taste; I hope you enjoy it as much as my family and I do, and as always, if you do, please don’t forget to give me a big thumbs up, comment down below your thoughts and if you new to my channel, please hit that subscribe button so you can be part of our family!!!!!! 😘

    I M P O R T A N T ⚠️
    Tip!!! Feel free to use all broth from your cooked meat but keep in mind your tamales will come out very oily! If you are making queso y rajas tamales, use store brough chciken broth!
    Dont want to use lard no problem, my second option is vegetable shortening
    The ingredients on both maseca instant corn masa for tamales and premade masa are the SAME, taste will be almost the same, I 100% think MASECA FOR TAMALES IS THE BEST!
    You can use regular maseca but for me it tastes more of a steam gordita rather than tamlaes.
    If using “premade masa” for 6 lbs use 4 cups liquid, 1 1/2 lbs lard, 6 tsp baking powder and salt, ALSO MAKE SURE THE MASA ONLY HAS 2 INGREDIENTS; ground corn treated with lime, and water
    What can go wrong? Adding TOO MUCH LIQUID will cause the masa to be super thin and not airy if you are scared for this, start with 1:1 ratio (for each cup of masa use 1 cup liquid) then slowly add the rest of liquid until the masa is well hydrated. If after adding 8 cups your masa dont float, this means it needs to be mixed more, continue mixing until masa is niced and whipped.
    Making tamales should be fun and not intimidated or a burden so sont be scared use the tools you have and if you need to make the filling 1 day ahead!!!! for our family gatheings we make 8 lbs of masa, big shoutout to my dad because he is the one that makes us the masa 😅🤭he gets to spend family time while getting a good arm workout here is a good clip • Video MAKING TAMALES IS VERY IMPORTANT TO ME WE ARE NOT ONLY MAKING TAMALES BUT ALSO CREATING MEMORIES AS WE GATHER AROUND THE BIG BOWL OF MASA!
    Ingredients: 36-40 tamales, depends on how much masa you spread on each corn husk
    12 oz lard
    6 cups instant corn masa for tamales
    4 cups broth from cooked meat
    3 cups warm water
    1 cup chile sauce if using
    5 tsp baking powder
    Salt if neeeded
    Corn husks
    1 serving of love 💕

    I did it Claudia!!!! I got the masa right with my stand mixer and used your method to spread the masa like butter. It went faster than my usual attempts and my family loves them!!! Seriously delicious. You would be so proud to know how much you are helping me with Mexican style cooking!!!

    Thank you, your tamales look delicious. We cook a big pot of tamales for only 45 mins to an hour and they are done beautiful and delicious. Also, if you ever want to test and see if your tamale has the taste you want, all you have to do is put a tamale in a plastic bag and put it in the microwave for 1 or 2 minutes, depending on the size and you get a perfect cooked tamale, just let it cool for about 30 to 45 seconds before you taste.

    I made my first batch of tamales this weekend thanks to your videos. My masa never passed the floating test, however I got a consistency I was happy with and every single person who tried my tamales has now labeled me as the tamale guy because of how tasty they were. None of them know that my masa didn't pass the floating test so shhhh :). I made the red chili sauce ones all by myself and they came out great. It's the masa I need to work on so thank you for this video!
    Hopefully you can make Chile con Carne y Tortillas (from scratch) some day! Thanks for your videos!

    Thank you. I used the recipe on the bag for a smaller quantity and instead of melting the shortening (I have to use this because some of my family members don't eat lard for religious reasons) like it says on the bag, I whipped it like you did with the lard. Then I added more water because that ratio of liquid to masa is way off. I needed at least 3/4 cup more of water. I have yet to steam mine but I have confidence that they will steam okay.

      Another thing I just made my masa and it actually floated this time my masa has never floated!!! I mixed 20 mins and added about 1/2 more of warm water 🤗

    Omg ty so much! We've been trying for days to pass the float test but now we've learned that the masa was too thick and dry. I searched everywhere and even followed the recipe on the tamal package and it was also too dense. It seems like everyone on the internet likes tortilla style masa because after watching this video the difference is night and day in the consistency. I thought it was close and kept beating for hours but after I saw this I added about a 1/3 cup of water mixed for 10 mins and bam passed the float test! Ty ty ty ty!!! My fiance and I only started this project because I live in a town full of immigrants selling tamales in the parking lot for $2 a piece and they are all so dense and dry but now we can make our own and they will be moist and yummy thanks to you!

    Thanks Claudia. I made masa before by hand and this year I have a mixer. Following these steps it was SOOO easy to make tamales I will be making them more often. I don’t like how hot it makes my stand mixer but it gives me another reason to use it.

    For the life of me, I can NOT get the masa to float!!!! I mixed with a hand mixer for more than 45 minutes. I added some water and mixed for a bit longer but it didn't help. I felt like the masa is just too thin.

    Do you ever go: 'Whoever came up with tamales, God bless that person', etc.? I go like that sometimes. Similarly, there's things I'm thankful for, like soap, belts, etc. Those are obviously the best tamales in the Universe. I did spot a bottle of adobo sauce & bought it & was hoping it's the sauce I'm thinking it might be. It says on the bottle what I could do with it. I thought about trying it in Chili at least.     This was super helpful. My biggest complaint with Tamales is that the Masa is so thick with very little filling. Your's look just perfect! I will give your method a try!

      When you make your own tamales you can decide how much filling you want to add. When buying someone's tamales they try to make as many as they can, thus less filling. More cost effective for them.

    The chicken or beef broth liquid may be defatted by putting it in the refrigerator overnight. As it cools, the fat will collect to the top of the container and form a layer of white colored fat. Simply skim off this layer and either discard it or use it for as a cooking fat in other recipes.

    Merry Christmas Claudia! I am making your tamales right now for the 4th year in a row. However, I cannot seem to get the massage to float. Why does it it not flow? I know you said to add more water but what happens if it does not float? Please respond back to me. I'm so sorry. I am doing them now and I've been mixing for 45 minutes. I follow the recipe to the T and it's still not floating. I mix for about an hour

The first batch is almost done but I could not get it to flot I literally mixed it for like an hour with a hand mixer and if I would have put more liquid I felt like it would be too watery to spread. But I have made your tamale recipe in the past years the first video I seen was with your dad and that video was the one I'm always trying to go back on but I can never find the video. For some reason that video is easier for me to follow LOL 😆 when I made you tamales in the past last year it did not float but it was still so bomb! What is the difference of when it floats and when it does not float? Ps. I don't know if you have tried the New Mexico Autumn roast hot green chili hatch the Frozen kind you should make a video using that chili, it's so good!     My masa never floats and I've followed your steps and even have the same stand mixer. I still use the to masa and it turns out good. But I feel I'm not doing it right if my masa doesn't float. I'm beginning to think it's a Mexican urban legend hahaha. l'll get it right someday.

      Awe my beautiful amiga, try adding a little water then mix again and try again I’m not sure why it’s not working for you, but I left some notes in the description box hope this time it works and you have no issues😊❤

      Same here, I have tried this method multiple times and absolutely can not get my masa to float, I feel like at one point you have to have added too much liquid. I don't know, but I still have never gotten there.

      You're not along, I'm Mexican. The water test didn't work for me .. but no mixer ..it's the lard.. you need more. She said 12oz or more water. 🤔 I will try again for New years. God bless 🙌

    I love the way you make the masa super easy! 🥰 I made your green Chile tamales 🫔 and they came out perfect 💗 . . But when I made the red ones with beef the masa came out way to oily , so now that you explain the broth shouldn’t have all the oil it makes sense! That day I did have to go to the store and buy beef broth and it turned out fine 🥲 . . .

    Hi Claudia I have made many of your meals with success, but the masa for the tamales, failure! I am on my 4th batch and cannot get my masa to float. I have followed your recipe to the T.. Just don't know what Im doing wrong. Very frustrating.
