    Thats a great attempt in preparing a Durban Style Mutton Curry. Our Durban Mutton curry is traditionally a tomatoe and onion base and its more deep RED in colour with the Paprika and Kashmiri Chillie Powder with loads of thick gravy soaking potatoes garnished with lots of coriander and curry leaves 😋

      Thanks so much and love the tips around the red depth of colour too, nothing tastes quite as good as eating a Durban Mutton Curry in Durban!! Appreciate it if you’d consider subscribing as well.

      @urbanrajah you never cook a curry in a pan...always a pot
      and don't forget to braise your onions first and let you spices cook once onions are golden brown before adding meat...this is to bring out all the flavour.
      then you add water to make a gravy and then the meat should slow cook and the lastly you want to add the potatoes...

    • @urbanrajah
      @urbanrajah  2 місяці тому +4

      @@C_911_ I’m glad we cook the same way! I love cooking in a pot, but for the camera it’s easier to film and see the ingredients in a pan otherwise viewers miss all the yummy juices. I also grew up cooking the onions until nice and brown as you can see in the video and brown the meat which we also do, also ensuring the spices don’t burn and of course adding the water once all the flavours have mingled.
      Thanks so much for watching and commenting.

    This curry is missing tomatoes and potatoes. He made a braised mutton that goes nice with roti. It is not the Durban mutton curry that you can have in a bunny chow.

    • @urbanrajah
      @urbanrajah  2 місяці тому +1

      You’re right it was delicious. The reason for using a frying pan for the video is that for filming purposes it’s easier for the camera to show what’s going on and share the visuals with people. Otherwise it’s hard to show the yummy details! Thanks for watching and I appreciate the feedback.

    • @urbanrajah
      @urbanrajah  2 місяці тому +2

      Thanks for watching and taking the time to comment. You’re right I’m not from Durban but this recipe was just one of a few recipes given to me and demonstrated by Durban families whilst I was there. I’m just celebrating their recipes. As for smelling ingredients why wouldn’t you do that? Cooking is a multi-sensory process and starts with smell!

  • @nashsingh1349
    @nashsingh1349 Місяць тому

    Misleading leader... This is most definitely not a curry... A typical curry has gravy, and requires a suitable, deeper, pot, not a frying pan... This post is all about braised meat...

    • @urbanrajah
      @urbanrajah  Місяць тому +1

      @@nashsingh1349 thanks for watching and sharing your thoughts. I grew up eating and cooking curry. I’ve used a frying pan for this video so that the camera can actually capture the cooking process in a clearer way, rather than using the usual pot I cook in as it’s harder for the camera to capture the angle in a pot.
