MY MOTHER-IN-LAWS DURBAN STYLE LAMB CURRY

  • A visit to DURBAN is not complete unless you have an authentic Durban style lamb curry. This meal is a staple in most South African homes and todays recipe has been passed down to my mother-in-law by her mother. A true DURBAN style Indian curry.

    Total Time: 1 Hour
    Servings : 6 - 8 People
    INGREDIENTS
    • 1.5 KG Lamb
    • 1 Whole Onion
    • 3 Tomatoes liquidised
    • 3 Medium-Large Potatoes
    • 1/2 Cup Oil
    • Curry Leaves
    • 1 TBSPN Ginger & Garlic Paste
    • 3 Chillies Sliced
    • 1 TSPN Whole Breyani Mix Spice
    • 1 Bay Leaf
    • 1/2 TSPN Tumeric
    • 1 TSPN Dhania & Jeera Powder
    • 2 TSPN Garam Masala
    • 5 TBSPN Kashmiri Special Mix Masala
    • Rough Salt
    • 1/2-1 Cup Hot Water
    • Coriander
    METHOD
    1. Add oil to a medium heated pot.
    2. Add in onions & mix.
    3. Add in whole breyani spices, bay leaf, chillies, curry leaves & ginger & garlic paste and mix until everything is coated well.
    4. Add in tumeric, dhania & jeera spice and garam masala and stir until everything is mixed into the oil.
    5. Add in kashmiri masala and mix well.
    6. Add in tomatoes & mix well for 2 mins and allow to simmer for about 5-7 mins.
    7. Add in lamb and mix well until all the meat is coated and allow to simmer for 20 mins. Stir occasionally every 5-7 mins.
    8. Add in 1/2 cup of hot water and mix well and allo to simmer for 5 mins.
    9. Place the potatoes around around the meat and allow to simmer in the gravy until cooked.
    10. Garnish with coriander and serve.
    SERVING OPTIONS
    You can serve this curry with the following: Rice, Bread, Roti Or Naan.

    Very authentic looking. Spices are important, and I go to an Indian supermarket for my goodies. 18 years in Durban allowed me to love Durban style....

    Hi, Mam very nice recipe, please share one pot veg biryani and one-pot nonveg biryani. (Not layer one). I M from India living in Johannesburg and I think SA Indian people make the best biryani in the world.

    I'm originally from PE - now living in the US. I LOVED the Indian curries growing up in South Africa. I miss the curries, biryanis samoosas and mince roti's - somehow the South African Indian spices have a unique flavor, making it, to me the best curry in the world. Thanks for sharing your recipe!!!

      @@jleong638 no, but you can make your own variations. You can buy the ground spices or make your own. The masala is a blend of kashmir masala and curry powder. You can buy. Garam masala, coriander powder, cumin powder. And you should be good

    Mother In Law is by far my favorite masala. I buy it premade from spice emporium. I still start by frying cinnamon, star anise, and cardamom in the beginning to flavour the oil. 1st layer of flavour.And Mutton or goat is much better than lamb. but i still sometimes use lamb if I only have limited time

    enjoyed this video. I've seen different methods to curry - some braise the meat first then add spices, some braise spices and onions first and then add meat - is there a difference?

      Thank you. I think it is just preferential. You still getting the same out come. We like to braise the onions and dry spices to release the flavours of the whole and ground spices. Then you add the tomato and meat and lock in all the flavours. As i said it’s preferential, you’ll still get a lamb curry once you done 🤭

    Help!!! The Kashmiri masala used in the video is it the same as Kashmiri chili powder?

      Hi the Kashmiri masala used in the video is a blend of wet masala, leaf masala and kashmiri masala. Kashmiri on its own is very hot so be mindful of who much you use.

      Thank you 🙏🏽 so the Kashmiri Masala we used was store bought. We buy from gorimas. Many other stores have it. It’s usually a blend of wet masala and plain Kashmiri masala. You can tell them how hot or Mild you would like your masala. They mix it to your preference.

    Is there any particular reason why the lamb isn’t browned first before adding to the curry ?

      Its not a stewing process where the lamb browns first, its more of a braising method, you want the lamb to soak up all the spices and thicken as it cook, also this lamb releases more flavor this way.

    indian style mutton curry but we won't use kashmiri chilli powder,we use guntur chilli powder and one spoon kashmiri chilli powder for colour that's it.

    Is your Kashmiri masala hot, my spice shop has Kashmiri chili powder, is this the same thing, you seemed to put a lot in ?

      The Kashmiri we use it medium/Mild to hot. So if you want it spicier you add more. That being said, this spice mix we using is a blend of Kashmiri masala and other masalas to balance the heat. If you would like your blend of masala to be spicer you can ask for more Kashmiri when they mixing your spices.
      You can add Kashmiri chili power. Just be mindful it maybe very spicy as it should be a pure blend. So maybe add 1/3-1/4 the quantity we added.

      The masala we used is from Gorimas. Its called Kashmiri Special Mix and when they mix it for you, you tell them how you would like it. Mild or Hot

      @@BondWarrior that’s exactly what the blend is, Kashmiri and a wet masala and I think leaf masala if im not mistaken , you so clued up 😀. The color comes from the kashmiri masala 👌🏽
