- Join Claudette Zepeda in San Diego as she makes salsa macha and Oaxacan chicken. Salsa macha is one of the oldest sauces in Mexico, dating back to the Aztec Empire. It is now prepared in over two hundred different ways. Claudette's variety includes chile pasilla, chile de árbol, peanuts, toasted sesame seeds and more. The Oaxacan chicken is spatchcocked and the seared in salsa macha, before being roasted in the oven.

omg these videos are just people cooking now. i know it's supposed to be like that but it was SO fun before. soooo sad. the editing was everything
Of all the people they've had on here, I genuinely actually really like her, very natural without that weird awkward vibe most of the other videos give off, and she's very informative. Would love to see her again.
She's not a flauntingly weird looking or acting one. She's just a good chef, so yeah, I think she's a good addition to the team too.
I like her too. She seems nice.
This reason this woman is likeable as she's just cooking good food and sharing her experiences. If she became a regular her personality would shine through and we'd get to know her, as we did with the rest of the cast and grew to love them. It's the complete opposite of what they tried to do with the other new hires who I think we can all safely say, almost nobody is enjoying watching.
For real, its almost as if its encouraged to be awkward on camera. Like, its completely ok to be confident and direct. You don't have to hide behind being awkward to seem more approachable.

Mexican food is so much more than Tex-Mex and Cali-Mex. it’s really world-class cuisine. Love this recipe, especially the salsa!
In anything texmex is probably least tasty mexican food, yet most popular anyway.
much like indian food, we have taken it for granted. its difficult to make but when you have the feel, you'll be going through it so quickly and effortlessly!

@@vijay20 Good comparison. Both masalas and moles are ingredient rich and complex to prepare but as you say it becomes almost automatic if you make them often.

@@passiveagressive4983 it's a false cognate; in spanish "patrimonio" is used in relation to heritage, In english "patrimony" is used more often related to inheritance.

This was perfectly done in every way. I have a deep fondness for learning about how women around the World care for their families with the foods they cook. They share their history, and their hearts, through the dishes they create. Watching this was not only a glimpse into the lives of these women, but I felt invited to respectfully join them. Beautiful. I can’t wait to see more.
I'm a guy and I felt the same a very natural and charismatic chef and presenter/narrator.

In Brazil we have Mexican fast food chains and this is so refreshing! Not only we learn about a new dish but the Mexican-Oaxacan culture! LOVED IT! Well done BA and Claudette!

As I prepare for Thanksgiving I will remember that I celebrate the memory of those walks to the kitchen as child to see the progress of the celebrated meal that my beautiful mother was so proud to be able to provide for her daughter and a few well fed cats. I miss the old BA edit style. I watched this for 5 minutes and thought it was Food52.. The style used to be so unique.

@@pmpmpmpmpmpmpm absolutely has nothing to do with the setting. Rather the overall tone, editing, directing, music, the energy between the team and cameramen etc. Old BA could have shot in an alley way and it would have been true to the BA style. But by all means, miss the point entirely 😻

This is like a Bob Ross cooking show. It is calm an yet passionate. It looks easy but I bet it isn't. And the result looks amazing. Overall: I want to see more of her.

@@manhavai :) I agree, I think it's very cool she can speak both languages without an accent. I'm trying to learn Spanish myself but my Spanish pronunciation is terrible. Now that I know there is a Top Chef Mexico, I'm definitely going to check that out!
You can absolutely tell when someone who speaks the language says something in their vernacular as opposed to the horrid affectation some people use to shoehorn spanglish in the middle of a sentence

I totally love Claudette on Top Chef and was so sad to see her not make it to the finals. But her career has been amazing to watch and am super happy to see her on BA. I was excited to watch this video and am planning on making this for my family. Please make more videos with her.

Yes, they need to edit this video a bit. Claudette’s recipe with Vice is a great video and does her justice. Yes things can go wrong with cooking, but this isn’t live, no need to leave in all the “issues.”

Wow! Thank you for everything you did here. For sharing this recipe, your story, your beliefs and confirming I need to go to Oaxaca. It really had a significant impact on me. I just built a wood fired oven and am going to try and make this entirely in the wood fired oven. I am guessing the sear I can get on the chicken in a 700degree cast-iron could be amazing.
